BAKED SWEET POTATO VEGETABLE SAMOSAS RECIPE | ALLRECIPES

Baked Sweet Potato Vegetable Samosas Recipe | Allrecipes image

Samosas are a delicious Indian treat. A crisp outside pastry with a savory filling that is either vegetarian, chicken, or lamb. This recipe is a spin on the classic samosa, using sweet potatoes instead of plain, and using pre-made pie crust so they can be baked in the oven instead of deep-fried. Chicken stock can be used for vegetable stock if you're not concerned about keeping them vegetarian-friendly.

Prep Time 20 minutes

Cook Time 1 hours 15 minutes

Yield 16 samosas

Number Of Ingredients 10

3 tablespoons vegetable oil
2 cups diced sweet potato
1?½ cups diced eggplant
1 small onion, diced small
2 tablespoons curry powder
1 tablespoon ground cumin
1 tablespoon garam masala
3 cups vegetable broth, or more if needed
¼ cup all-purpose flour, or as needed
2 sheets prepared pie crust

Steps:

  • Heat vegetable oil in a large, heavy-bottomed pot over medium-high heat. Saute sweet potato, eggplant, and onion in hot oil until the onion is softened, 7 to 10 minutes; season with curry powder, cumin, and garam masala.
  • Pour stock into the pot. Bring liquid to a simmer, reduce heat to medium-low, and cook until vegetables are completely tender, adding more broth as needed to keep mixture moist, 10 to 15 minutes. Remove pot from heat and set aside to let mixture cool completely.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Lie each pie crust onto a lightly-floured surface. Cut each crust into 8 wedges. Spoon 2 tablespoons of the vegetable mixture into the middle of each triangle.
  • Bring two corners of each triangle together, pressing the dough along the edges to seal. Bring up the last corner and seal the last edge. Arrange samosas onto a baking sheet.
  • Bake in preheated oven until golden brown, about 45 minutes.

FILO PASTRY SWEET POTATO SAMOSAS RECIPE | JUS-ROL

Filo Pastry Sweet Potato Samosas Recipe | Jus-Rol image

Try this delicious recipe for sweet potato samosas – made with Jus-Rol’s filo pastry sheets and seasoned with curry powder.

Categories     Autumn    Christmas and New Years    Party Food    Snacks    Starters    Valentine's Day

Total Time 60 minutes

Number Of Ingredients 10

8 sheets Jus-Rol™ Filo pastry sheets
Melted butter for brushing
1 medium potatoes
1/2 good sized sweet potato
1 tbsp vegetable oil
1 onion diced
1 clove garlic finely chopped
2-3 tsp curry powder strength of your choice
50g frozen peas defrosted
Small bunch fresh coriander

Steps:

  • Method: Follow pastry preparation instructions. Preheat oven to 190°C (170°C for fan assisted ovens) Gas M5
  • Wash both potatoes, cut into large chunks – leaving skin on, and cook in normal way in boiling salted water until just cooked. NB the sweet potato will take less time than the ordinary one so pop those pieces into the pan after the others have been cooking for 5-7 minutes.
  • Meanwhile heat the oil in a pan, gently sauté the garlic and onion, stir in curry powder and cook for a further 3 minutes, remove from heat. Once the potatoes are cooked, cut into small dice and add to onion mixture, mix well and then stir in peas and allow to cool.
  • Add some chopped coriander to the melted butter (optional) Cut the filo sheets in half down their length, re stack the strips and lightly brush one strip with melted butter, top with a second strip and brush again. Place a spoonful (approx. an eighth of the total) of the filling towards the end of the pastry strip nearest you, slightly on the left of the strip and just up from the bottom.
  • Now fold the bottom right hand corner up to cover filling, fold over wrapped filling to give a triangular shaped parcel.
  • Continue folding up the pastry strip ensuring points are tucked in to prevent filling seepage. Brush completed parcel with melted butter and place on baking tray. Continue with all remaining filling and pastry.
  • Bake samosas for 15 – 20 minutes until golden brown, serve hot, sprinkled with further coriander if desired.
