Here's a sweet potato casserole that will please everyone in the family, but isn't sticky or cloying. If your guests insist on a traditional marshmallow topping (let's admit that kids love it, and for some adults, it just isn't Thanksgiving without it), see the variation below.

Yield Makes 8 servings

Number Of Ingredients 4

5 pounds orange-fleshed sweet potatoes, such as Louisiana, jewel, or garnet yams
3/4 cup all-purpose flour
3/4 cup plus 1/3 cup (packed) light brown sugar
14 tablespoons (1 3/4 sticks) unsalted butter, softened

Steps:

  • Position rack in center of oven and preheat to 400°F. Butter 9- by 13-inch baking dish or 2-quart casserole. Line rimmed baking sheet with aluminum foil.
  • Pierce each potato with fork and transfer to baking sheet. Bake until tender, about 50 minutes. Cool until easy to handle.
  • Meanwhile, make streusel: In medium bowl, combine flour, 3/4 cup brown sugar, and 1 stick butter. Rub mixture between fingertips until blended and crumbly. Set aside.
  • Halve potatoes lengthwise and scoop out flesh into large bowl. Add remaining 1/3 cup brown sugar and 3/4 stick butter and mash with potato masher or, for a smoother purée, handheld electric mixer. Spread mixture in prepared dish and cool completely. (Streusel and purée can be made up to 2 days ahead and refrigerated, separately, covered.)
  • Sprinkle streusel over potatoes. Bake until golden brown, about 40 minutes. Let stand 5 minutes before serving. (Completed dish can be prepared up to 1 day ahead and refrigerated, covered. Remove from refrigerator 1 hour before reheating and let come to room temperature. Bake, loosely covered with foil, until heated through, about 25 minutes.)
  • Sweet potato purée with marshmallows: Omit streusel. Spread purée in baking dish, cover with foil, and bake until heated through, about 30 minutes. Sprinkle top with 3 cups miniature marshmallows and broil until marshmallows are lightly browned, about 1 minute. Serve immediately.

6 sweet potatoes, peeled and cut into cubes
? cup brown sugar
¼ teaspoon ground allspice
¼ teaspoon ground cinnamon
½ (10.5 ounce) package miniature marshmallows

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place sweet potatoes into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes; drain. Transfer drained sweet potatoes to a baking sheet.
  • Bake sweet potatoes in the preheated oven until dried, 3 to 4 minutes; transfer to a mixing bowl.
  • Mash sweet potatoes with a potato masher until no large lumps remain; add sugar, allspice, and cinnamon. Continue mashing potatoes until evenly seasoned; spoon into a casserole dish. Spread miniature marshmallows in an even layer over the sweet potato mixture.
  • Bake in oven until marshmallows just begin to brown, 10 to 15 minutes.
  • Switch oven to broil; cook under broiler for 1 minute.

  • 1. Preheat the oven to 350?F. Line two baking sheets with parchment paper. 2. In the bowl of an electric mixer fitted with the paddle attachment, cream the butter, brown sugar, sugar and vanilla extract until light and fluffy, about 5 minutes. Add the sweet potato puree and mix to combine. Scrape the bowl well and mix for 1 minute more. 3. In a medium bowl, whisk the flour, baking powder, baking soda and salt to combine. Add the flour mixture to the bowl of the mixer and mix on low speed until the mixture is evenly combined, about 1 minute. 4. Scoop the dough into ?-cup mounds onto the prepared baking sheets. Stagger the cookies, leaving at least 2 inches between them. 5. Transfer to the oven and bake until the cookies are lightly golden around the edge and spring back lightly when touched in the center, 10 to 12 minutes. Add a marshmallow to the top of each cookie and press it gently into the cookie. Return the cookies to the oven and bake until the marshmallows have melted over the surface and toasted slightly, 7 to 9 minutes more. (If any of the marshmallows start to slide off the cookies, you can use a small metal spatula to nudge them back in place?they will slide right back!) Cool completely before serving. Store leftovers in an airtight container at room temperature.
