Silky Sweet Potato Puree can be made two days in advance.

3 pounds whole sweet potatoes, pricked with a fork
½ teaspoon salt and freshly ground pepper, to taste
½ cup buttermilk
½ cup whole milk
6 tablespoons butter

Steps:

  • Adjust oven rack to upper-middle position; heat to 425 degrees. Place potatoes on a foil-lined pan; bake 45 to 60 minutes, until tender. Peel when cool enough to handle.
  • Puree with salt and pepper in a food processor. With motor running, gradually add milks through feeder tube, then butter. Process until silken. (Can make up to 2 days ahead; store in an airtight container.) Reheat and serve.

Number Of Ingredients 8

2?½ pounds sweet potatoes, peeled and cut into 1-inch cubes
¾ cup packed brown sugar
¼ cup butter, softened
1?½ teaspoons salt
½ teaspoon vanilla extract
½ cup finely chopped pecans, divided
Cooking spray
2 cups miniature marshmallows

Steps:

  • Preheat oven to 375°.
  • Place the sweet potatoes in a Dutch oven, and cover with cold water. Bring to a boil. Reduce heat, and simmer for 15 minutes or until very tender. Drain; cool slightly.
  • Place potatoes in a large bowl. Add sugar and next 3 ingredients (through vanilla). Mash sweet potato mixture with a potato masher. Fold in 1/4 cup pecans. Scrape potato mixture into an even layer in an 11 x 7-inch baking dish coated with cooking spray. Sprinkle with remaining 1/4 cup pecans; top with marshmallows. Bake at 375° for 25 minutes or until golden.

Use your hands to help knead flour into biscuits until it just holds together.  Dump dough onto a clean surface and bring dough together, using your hands to help incorporate any dry flour bits.  Pat dough into a ½” thick square. Fold dough in half from left to right, then fold in half again from top to bottom. Pat dough back out into a ¾” thick square.  Use a 2 ½” round cutter to cut biscuits out and place on prepared baking sheet. Gather scraps together and pat back down into ¾” thick square one more time to cut a few biscuits out.  Brush tops of biscuits with melted butter and bake until tops and bottoms are golden, about 20 minutes.
