Sweet Potato-Pineapple Juice - Hy-Vee Recipes and Ideas image

If you don't have a juicer, use a blender instead. Just cut the fruit and veggies into smaller pieces and strain into a chilled glass.

1 (12-to-15-oz.) sweet potato
0.5 c. of Hy-Vee Short Cuts fresh pineapple chunks
1 stalk(s) of celery
1 (2-inch) piece fresh ginger
1 dash(es) of ground turmeric

Steps:

  • 1.

    Juice sweet potato, pineapple, celery, and ginger in an electric juicer according to manufacturer's directions. Strain juice into a glass. Add turmeric. Stir to blend well. Garnish with a celery stick, if desired.

5 pounds yams or sweet potatoes, washed, pierced with fork
¼ cup margarine, melted
½ cup 100% DOLE® Canned Pineapple Juice
½ teaspoon salt
½ teaspoon pumpkin pie spice
1 can (20 oz.) DOLE® Pineapple Chunks, drained
½ cup packed brown sugar

Steps:

  • Place yams on foil-lined baking sheet. Bake at 375ºF., for 60 to 90 minutes or until yams are tender when pricked with a fork. Cool slightly, peel and cut into chunks.
  • Spoon baked yams into large mixing bowl. Add margarine, pineapple juice, salt and pumpkin pie spice. Beat until fluffy. Stir in pineapple chunks.  
  • Spoon mixture into lightly greased 13x9-inch baking dish. Sprinkle with brown sugar. Continue baking at 375ºF. for 15 minutes or until hot.

  • In a medium saucepan, add potatoes and 1/2 tsp salt, cover with water. Bring to boil, then reduce to simmer. Cook until fork tender and drain. In another saucepan, add the butter, brown sugar, pinch salt, pineapple juice, cinnamon and nutmeg. Bring to a boil and simmer until thickened some - won't be real thick, more like a glaze. If you want a thicker glaze, add a small amount of corn starch to the pineapple juice before adding. Once sauce is to desired thickness and potatoes are cooked. Add the drained pineapple to the glaze and cook until heated through. Stir in the vanilla. Gently toss the sweet potatoes with the glaze, being careful not to break up potatoes too much. Heat through for a few minutes and pour into a serving dish. Sprinkle with pecans if using. Serve immediately.
