A close cousin of pumpkin pie, this traditional sweet potato pie gets its creaminess from whipped sweet potatoes, evaporated milk, and sweetened condensed milk.  Using refrigerated deep-dish pie crusts keeps it easy.

Yield Makes 2 (9-inch) pies

Number Of Ingredients 11

2 pounds sweet potatoes, peeled and sliced
½ cup butter or margarine
3 large eggs
1 cup sugar
½ cup sweetened condensed milk
½ cup evaporated milk
1 teaspoon ground nutmeg
1 teaspoon vanilla extract
1 teaspoon lemon extract
1 (12-ounce) package frozen deep-dish piecrusts, thawed
Garnishes: whipped cream, grated nutmeg

Steps:

  • Cook sweet potato in boiling water to cover 30 minutes or until tender; drain.
  • Beat sweet potato and butter at medium speed with an electric mixer until smooth. Add eggs and next 6 ingredients, beating well. Pour mixture evenly into each piecrust.
  • Bake at 350° on lower oven rack for 45 to 50 minutes or until set. Garnish, if desired.

This is a fool proof pie. Made with a can of sweet potatoes and another of my favorite ingredients "sweetened condensed milk", This is a dense, rich and creamy pie- by the way you can make a pumpkin pie using this same recipe too - just change out the Sweet potatoes for 15 oz. can of pumpkin...This recipe is foolproof --promise!

2 cup(s) canned sweet potatoes, drained or (15 oz. can)
14 ounce(s) can sweetened condensed milk
2 large eggs
1 teaspoon(s) ground cinnamon
1/2 teaspoon(s) ground ginger
1/2 teaspoon(s) ground nutmeg
1/2 teaspoon(s) salt
1 - unbaked pie shell (8 or 9-inch)
toppings: - sour cream or streusel or chocolate glaze or maple glaze

Steps:

  • preheat oven to 425^. In a large mixer bowl,place the drained sweet potatoes- beat until blended and smooth. Add remaining ingredients;except pie crust; mix well. Pour into prepared pie shell. Bake 15 minutes.
  • Reduce heat to 350^. Continue baking for 35 to 40 minutes, or as directed with one of the favorite toppings below or; until knife inserted 1 inch from edge comes out clean. Cool. Garnish as desired. Store covered in refrigerator.
  • FAVORITE TOPPINGS: Sour Cream Topping: In medium bowl, combine: 1 1/2 cups sour cream 2 tablespoons granulated sugar 1 teaspoon vanilla extract After pie has baked 30 minutes at 350^, spread evenly over top; bake 10 minutes.
  • Streusel Topping: In a medium bowl,combine: 1/2 cup packed brown sugar 1/2 cup all purpose flour cut in 1/4 cup cold butter or margarine until crumbly. Stir in 1/4 cup chopped nuts. After pie has baked 30 minutes at 350^, sprinkle evenly over top; bake 10 minutes.
  • Chocolate Glaze: In a small saucepan over low heat, melt: 1/2 cup semi-sweet chocolate chips 1 teaspoon solid shortening Drizzle or spread over top of baked and cooled pie.
  • Maple Glaze: 1/4 cup Maple Pancake syrup Brush over baked pie crust and surface of the pie. (this is what I used).

When growing up some of our older cousins use to call my mama by her 1st and middle name (Nancy Hughes). My siblings and I had a hard time saying it, so we called her Nanshoe.   • Mash sweet potato in a bowl. Add orange juice, butter and mix well with mixer. Stir in brown sugar, sweet condensed milk, eggs, pumpkin spice and vanilla. Beat on medium speed until mixture is smooth. Pour filling into cooled graham cracker pecan crust. Bake at 350° F 45 to 55 minutes, or until knife inserted in center comes out clean. Pie will puff up like a souffle, and then will sink down as it cools.
