Steps:
- Cut sweet potatoes into 1/2-inch thick rounds & place into a bowl or plastic bag.
- Add grapeseed oil, salt and pepper, & STIR to completely coat the medallions.
- Place medalions on a parchment paper lined cookie sheet.
- COVER coated medallions with foil.
- Place in a *COLD OVEN* (This best caramelizes the medallions & brings out the natural sweetness.).
- Set oven to 400 ° F and turn on the power.
- Cook for 30 minutes.
- Remove the foil.
- Turn medallions over.
- Bake another 15 minutes until tops are browned,caramelized to your preference.
- Remove from oven & serve immediately.
- ENJOY!

Steps:
- Preheat oven to 425 degrees F.
- Peel sweet potatoes and cut them into 1/2 inch wide discs.
- Line a baking sheet with parchment paper for easy clean up. Toss together sweet potato, melted butter, herbs, salt and pepper right on baking sheet. Arrange potatoes in a single layer.
- Roast for 20 minutes in the center of oven. (Roasting in the lower part of the oven may lead to burning!)
- Remove baking sheet from oven and carefully turn over each medallion to allow for browning on both sides. (If potatoes are not yet browned roast for 3-5 more minutes before turning.) Roast for an additional 15-20 minutes.

- Pour water into your pressure cooker pot. Set steamer rack over the water. Prick sweet potatoes all over with a fork and place onto steamer rack. Lock pressure cooker lid in place and set steam vent to Sealing. Select Pressure Cook (Manual) and cook for 12 minutes on High Pressure. Let pressure release naturally. Carefully unlock and remove lid. Remove sweet potatoes from pressure cooker using tongs; place on cutting board and slice into 1/2-inch medallions. Peel skin from sweet potatoes. Melt ghee in a skillet over medium-high heat. Place medallions into hot ghee and cook each side until browned, 2 to 3 minutes per side. Season with salt.
