3 tablespoons coconut oil, divided
2 sweet potatoes, grated
3 (4 ounce) links pork breakfast sausage, chopped, or to taste
1 sweet onion, chopped
4 eggs
½ cup coconut milk
¾ teaspoon dried sage
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon garlic powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a baking dish with 1 tablespoon coconut oil.
  • Place grated sweet potatoes in the bottom of the baking dish.
  • Heat 2 tablespoons coconut oil in a skillet over medium heat. Add sausage and onion. Cook and stir until sausage is browned and onion is translucent, about 5 minutes. Place mixture in the baking dish on top of the potatoes.
  • Mix eggs, coconut milk, sage, salt, pepper, and garlic powder together in a bowl. Pour mixture into the baking pan.
  • Bake in the preheated oven until set, about 45 minutes.

1 large sweet potato
12 oz. of brussels sprouts
2 tbsp. of Hy-Vee Select olive oil
2 clove(s) of fresh garlic
1 tsp. of ancho chili powder
0 Hy-Vee salt
0 Hy-Vee ground black pepper
1 (15-oz.) can Hy-Vee black beans
0.5 c. of Hy-Vee frozen sweet corn
1 medium red bell pepper
5 Hy-Vee large One Step eggs
0 Fresh cilantro leaves

Steps:

  • 1.

    Preheat oven to 425 degrees. Spray a 15x10x1-inch baking pan with nonstick cooking spray; set aside.

  • 2.

    Place sweet potato and brussels sprouts on prepared pan. Add olive oil, garlic, and chili powder to vegetables; toss gently to coat. Sprinkle with salt and black pepper. Roast for 15 minutes.

  • 3.

    Remove pan from oven. Add black beans and corn. Use a large spoon to create five indentations in vegetables; place a red pepper ring in each. Gently crack an egg into each pepper ring, keeping the yolk intact. Season eggs with additional salt and pepper.

  • 4.

    Return pan to oven and bake for 10 to 12 minutes or until egg whites are set. Garnish with cilantro, if desired.
