I don't really like the traditional sweet potato casserole, but my son loves sweet potatoes, so I try to come up with different ways to cook them. This spring I tried grilling them. These are now a favorite of mine and my sons.

Number Of Ingredients 6

2 large sweet potatoes, cut into 1-inch cubes
2 tablespoons butter
2 tablespoons brown sugar
1 teaspoon ground cumin
¼ teaspoon cayenne pepper, or more to taste
salt and pepper to taste

Steps:

  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Divide the sweet potato cubes in half, and place each half in the center of a rectangle of aluminum foil. Top each portion with about half of the butter. Sprinkle about half of the brown sugar, cumin, and cayenne pepper over each portion. Season with salt and pepper. Fold the corners of the aluminum foil together and seal to form a pouch around each portion.
  • Cook on the preheated grill, turning pouches every 10 minutes, until the potatoes are tender and cooked through, 20 to 30 minutes.

Mashed Sweet Potatoes with Grilled Onions

4 pounds/1.8 kilograms sweet potatoes, scrubbed
1 large yellow onion, cut crosswise into ½-inch rounds
Extra-virgin olive oil
Kosher salt
Freshly ground black pepper
¾ cup/170 grams (1½ sticks) unsalted butter, softened

Steps:

  • Prepare the grill for indirect cooking over medium heat (350° to 450°F).
  • Brush the cooking grates clean. Grill the sweet potatoes over indirect medium heat, with the lid closed, until tender when pierced with a fork, about 1 hour, turning three or four times. Remove from the grill and, when cool enough to handle, cut the potatoes lengthwise in half. Remove and discard the skins. Place the potatoes in a medium bowl and cover with foil.
  • Brush the onion slices with oil and season evenly with salt and pepper. Grill over direct heat, with the lid closed, until tender, 10 to 12 minutes, turning once or twice. Remove from the grill and allow to cool. Cut into ¼-inch dice.
  • Using an electric mixer on medium speed or a potato masher, mash the potatoes with the butter until smooth. Add the diced onions and mix well. Season with more salt and pepper, if desired. Serve warm.
