Number Of Ingredients 9

3 cups all-purpose flour
3 cups whole wheat flour
2 packages dry yeast
1?½ cups warm water (105° to 115°)
? cup firmly packed brown sugar
½ cup butter or margarine, softened
2 eggs
1 (16-ounce) can cut sweet potatoes, drained
1?¼ teaspoons salt

Steps:

  • Combine flour in a large mixing bowl, stirring well; set aside.
  • Combine yeast and warm water in container of an electric blender; process until yeast is dissolved.
  • While blender is processing, add sugar, butter, eggs, sweet potatoes, salt, and 1 cup flour mixture. Process until smooth.
  • Add sweet potato mixture to remaining flour mixture, stirring to form a soft dough.
  • Turn dough out onto a lightly floured surface, and knead 5 minutes or until smooth and elastic. Place in a greased bowl, turning to grease top. Cover tightly and refrigerate 6 hours or overnight.
  • Shape dough into 32 balls. Place balls 3 inches apart on greased baking sheets. Cover and let rise in a warm place (85°), free from drafts, 1 hour or until doubled in bulk.
  • Bake at 350° for 20 minutes or until buns are lightly browned and sound hollow when tapped. Remove buns from baking sheets; cool on wire racks. Split and use as sandwich buns.

Yield 1 - 1/2 dozen rolls

Number Of Ingredients 8

1 (.25 ounce) package active dry yeast
4 tablespoons white sugar
½ cup canned sweet potato puree
½ cup warm water (110 degrees F/45 degrees C)
3 tablespoons margarine, softened
1 teaspoon salt
2 eggs
3?½ cups all-purpose flour

Steps:

  • Dissolve yeast, warm water, and 1 tablespoon sugar in a mixing bowl. Let stand 5 minutes.
  • Add remaining sugar, sweet potato, butter or margarine, salt, and slightly beaten eggs. Stir to mix well. Stir in 3 cups of flour. Turn out on a lightly floured surface. Knead 2 to 3 minutes, adding just enough of remaining flour to prevent sticking. Do not knead too heavily; when smooth, shape into a ball. Place in an oiled bowl, and turn to coat the surface. Cover, and let raise about 1 hour or longer.
  • Punch down, and allow dough to rest for 2 minutes. Divide into 16 to 20 balls, and place on a greased cookie sheet or in a 9x13 inch pan. Allow to rise until doubled.
  • Bake at 375 degrees F (190 degrees C) for 12 to 20 minutes. Serve warm.
