I love pancakes; my whole family does! But relishing in the carb-laden treat isn't really the high protein breakfast we should be starting our days off with. When traditional pancakes feel too heavy, and I want to feed my family a filling, nutritious breakfast, I make this simple recipe of sweet potato and banana pancake.

Number Of Ingredients 8

1 cup mashed sweet potato
1 ripe banana
1 egg
1/4 teaspoon baking soda
2 tablespoons coconut flour
1 tablespoon cinnamon
Coconut oil, for frying
Raw, organic maple syrup (optional)

Steps:

  • Peel and chop the sweet potato into chunks, add to a pot. Fill the pot with just enough water to cover the sweet potato and boil until very soft. Using a potato masher or mixer, mash the sweet potato until achieving a smooth consistency. Add ripe banana, egg, baking soda, flour and cinnamon. Mix well.
  • Heat coconut oil on a frying pan over medium heat. Add a large spoonful of the sweet potato batter to the pan. Let sit until bubbles begin to form and pancakes become firm. Cook each side for approximately 2-3 minutes, making sure not to let any side burn.
  • Serve immediately with maple syrup, if desired.
