OLD-FASHIONED SOUTHERN BUTTER ROLLS RECIPE - DESSERT.FOOD.COM
This is a very old recipe. I've read that butter rolls may have originally come about as a way for Southern cooks to use up biscuit dough scraps. Whatever the history behind this old-timey treat, it's one of my favorite comfort foods. Try adding finely chopped apple to the filling.

SWEET BUTTERY ROLLS | JUST A PINCH RECIPES
I can’t seem to get enough of these sweet buttery rolls. The rolls turned out about the size of a softball, or grapefruit. The crust is very soft, and light. These are amazing with honey butter or just honey. These defiantly put frozen rolls to shame, which is not a easy thing to do. I used half of the batch I made for a bread pudding recipe. It was great the sweetness of the rolls really comes through. Enjoy.

  • Place on a greased baking sheet, and bake at 350 F for 10 – 15 min. The rolls will be very light in color, so you may think they need more time. Don’t do this! The rolls burn very easily on the bottom. Enjoy!

  • In a large mixing bowl fitted with a dough hook, combine 2 3/4 cup flour, sugar, yeast, and salt. In a small microwave-safe bowl, heat milk at 30 second intervals until it’s approximately 120-130°F. Add milk and melted butter to the dry ingredients in the mixing bowl, and beat until just combined. Add egg, beating until just combined. Add enough remaining flour to form a soft, sticky dough. Beat for 2-3 minutes, or until smooth and elastic. If not using a dough hook, knead by hand on a lightly floured surface for 6-8 minutes, or until smooth and elastic. Place dough in a greased bowl, turning once to grease the top. Cover with plastic wrap, and let rise in a warm place until doubled in size, about 1 hour. Punch down dough, and turn out onto a lightly floured surface. Roll into a 12x10-inch rectangle. In a medium bowl, stir together sugar, butter, 1/3 cup cream, peanut butter, brown sugar, and honey until smooth. Spread half of filling (eyeball it) to within 1/2 inch of edges. Spread 1/2 cup jam over filling. Roll up jelly-roll style, starting with the long side, and pinch seam to seal. Spray a 13x9-inch baking pan with non-stick spray. Cut dough into 12 even slices. Arrange in baking pan. Cover with plastic wrap, and let rise in a warm place for 30 minutes. Meanwhile, preheat the oven to 325°F. Bake for 25-30 minutes, or until golden brown. In a small mixing bowl, beat remaining filling and remaining cream with powdered sugar. Spread over warm rolls. Garnish rolls with remaining 1/4 cup jam. Serve warm.

  • 1. Prepare the biscuit rolls: In a small bowl, stir the yeast into the warm water. Let stand until bubbly, about 5 minutes. (If it doesn't bubble, you'll have to start again.) 2. In a medium bowl, whisk together the flour, sugar, baking powder, salt and paprika. Cut in the cold butter (I just use my hands) until the mixture is crumbly, with pea-sized bits of butter showing. Stir in the yeast mixture and the sweet potato until the dough forms a ball. 3. Turn the dough out onto a lightly floured surface. Knead until smooth and elastic, about 5 minutes. The dough will be quite soft and sticky, so you'll need to keep the counter lightly floured as you knead. Lightly grease a large bowl with olive oil and place the dough inside, turning to coat the top. Cover with plastic wrap and let the dough rise in a warm, draft-free space until it has doubled in size, 1 to 2 hours. 4. Punch down the dough. On a lightly floured surface, pat the dough into a ?-inch-thick circle. Using a 2?-inch round cutter, cut the dough into rounds, re-rolling the scraps once. You should get about 12 biscuit rolls. Place the biscuits into a lightly greased 9-inch by 13-inch baking dish, aiming for 3 rows of 4 biscuits. It's fine if they're snuggled up against each other. If you have more than 12 rolls, fit the extras into a smaller baking dish (the baking time stays the same). Cover with plastic wrap and let rise in the same warm place until doubled in size, 40 to 50 minutes. Preheat the oven to 400?F. 5. Bake the biscuit rolls for 15 minutes, then turn down the heat to 375?F. Bake until deeply golden brown, 10 to 12 minutes more. 6. Remove the pan from the oven and cool the rolls for 5 minutes. 7. Prepare the glaze: In a small bowl, combine the melted butter and honey. Brush the tops of the warm rolls with the glaze and sprinkle with flaky salt. Cool the rolls until barely warm before eating. These are best eaten the day they are made, but leftovers can be warmed the next day in the oven at 300?F with excellent results.
