3 lbs chicken wings (12 to 14)
6 cups vegetable oil
1/2 cup unsalted butter
3/4 cup hot sauce
1 1/2 tablespoons apple cider vinegar or 1 1/2 tablespoons red wine vinegar
2 tablespoons brown sugar
1/2 cup honey
4 tablespoons cayenne pepper

Steps:

  • Season chicken over night with hot sauce and Cayenne pepper.
  • In a large (5- to 6-quart) deep heavy kettle heat 6 cups oil until a deep-fat thermometer registers 375°F Carefully lower wings into oil and fry, until cooked through, golden, and crisp, 5 to 8 minutes. With a slotted spoon transfer wings to paper towels to drain. Pat dry and fry remaining wings in same manner, returning oil to 380°F between batches.
  • If grilling, oil grill and cook 7 ot 10 minutes or until golden and crisp.
  • In a large skillet melt butter over heat and stir in hot sauce, vinegar, Honey, brown sugar. Cook until it starts to boil. Add fried wings and toss to coat.

2.5 pound Chicken Wing
to taste Salt
to taste Ground Black Pepper
as needed Canola Oil
8 tablespoon Unsalted Butter
1 tablespoon Garlic
1 cup Hot Sauce
1/4 cup Ketchup
1 tablespoon Soy Sauce
1 1/2 tablespoon Granulated Sugar

Steps:

  • Lay out the Chicken Wing (2.5 pound) on a rack and let them dry out. Season with Salt (to taste) and Ground Black Pepper (to taste).
  • Add Canola Oil (as needed) to your deep fryer or frying pot. Place your wings in one at a time but don't overcrowd the oil. Cook until golden brown between 15-18 minutes. Remove to a large baking tray and set aside.
  • In a sauce pan over high heat melt the Unsalted Butter (8 tablespoon).
  • Once the butter is melted, add Garlic (1 tablespoon), Hot Sauce (1 cup), Ketchup (1/4 cup), Soy Sauce (1 tablespoon), Granulated Sugar (1 1/2 tablespoon) and bring up to boil.
  • Place the lid on, reduce the heat to simmer the sauce for around 5 minutes and turn the heat off.
  • Preheat your oven at 350 degrees F (180 degrees C).
  • Place the chicken wings into the sauce and mix to coat each wing in sauce. Then place the chicken wings back in the baking tray.
  • Place in your preheated oven for 10 minutes.
  • Repeat by coating in sauce again and baking in the oven for another 10 minutes. Serve and enjoy!
