2 to 3 large sweet potatoes (1-3/4 pounds), peeled and cut into 1/8-inch slices
2 tablespoons canola oil
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon taco seasoning
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper
DIP:
3/4 cup mayonnaise
1/2 cup sour cream
2 ounces cream cheese, softened
4-1/2 teaspoons minced fresh cilantro
1-1/2 teaspoons lemon juice
1/2 teaspoon celery salt
1/8 teaspoon pepper

Steps:

  • Place sweet potatoes in a large bowl; cover with cold water. Let stand 20 minutes. Drain; pat dry. , Preheat air fryer to 360°. In a small bowl, mix oil and seasonings; drizzle over potatoes and toss to coat., In batches, arrange sweet potatoes in a single layer on greased tray in air-fryer basket. Cook until golden brown, 15-20 minutes. , In a small bowl, beat dip ingredients until blended. Serve with chips.

Here, sweet baby bells are parcooked in the air fryer to soften, then stuffed with a blend of cheddar and neufchatel, creamy yogurt, garlic, and fresh herbs. Pop the peppers back in the air fryer until they’re lightly browned and melty and your dream snack is served.

16 item(s) Sweet mini baby bell pepper(s)
3 oz Neufchâtel cheese or reduced-fat cream cheese, softened
0.333 cup(s), shredded Reduced-fat cheddar cheese
0.25 cup(s) Plain fat free Greek yogurt
2 Tbsp Fresh parsley finely chopped
2 tsp Dill chopped
0.25 tsp Kosher salt
0.25 tsp Black pepper
1 medium clove(s) Garlic clove(s) grated

Steps:

  • Preheat an air fryer to 350°F. Cut a slit down the length of each bell pepper, from the stem to the tip. Coat the bell peppers with cooking spray. Add the bell peppers to the air-fryer basket and cook in the air fryer for 5 minutes. Shake the basket and continue to cook for 3 minutes more. Transfer the bell peppers to a cutting board or work surface and let cool.
  • Meanwhile, in a medium bowl, combine the cheeses, yogurt, parsley, dill, salt, black pepper, and garlic.
  • Stuff about 2 tsp of the filling into each bell pepper through the slit. Arrange the peppers in the air-fryer basket in a single layer. (It’s OK if they’re crowded.) Return the basket to the air fryer and cook until the stuffed peppers are tender and the filling is lightly browned on top, 4 to 5 minutes.
  • Serving size: 2 stuffed peppers
