A different sort of roast. Slightly sweet with an unusual blend of spices. This was one of my son's favorite meals when he was young.

Number Of Ingredients 13

3 lbs chuck roast or 3 lbs beef brisket
1 teaspoon nutmeg
1 teaspoon cinnamon
1/2 teaspoon ginger
2 teaspoons salt
1/8 teaspoon pepper
2 tablespoons olive oil
2 onions, sliced
1 clove garlic, diced
1/2 cup brown sugar
1/2 cup red wine (or cider vinegar)
1 cup water
4 bay leaves

Steps:

  • Combine nutmeg, cinnamon, ginger, salt, and pepper; rub into meat.
  • Heat pressure cooker, add olive oil and brown meat well on all sides.
  • Add onion, garlic, brown sugar dissolved in wine, water, and bay leaves.
  • Close.
  • cover securely.
  • Place pressure regulator on vent pipe and cook 35 minutes with pressure regulator rocking slowly.
  • Let pressure drop of its own accord.
  • Or cook at 300 degrees for about 4 hours in a Dutch oven, or cook 8 hrs on low in a crock pot.
  • (This is my preferred method.).

4 lbs rump roast
1 teaspoon salt
1/4 teaspoon ground pepper
2 tablespoons olive oil
1 1/4 cups beef bouillon
2 medium onions, chopped
4 anchovy fillets, chopped
1 bay leaf
5 peppercorns
8 allspice berries
2 tablespoons vinegar
1 tablespoon molasses
2 tablespoons all-purpose flour
1/2 cup heavy cream

Steps:

  • Rub beef roast with salt and pepper.
  • In a large, heavy saucepan, heat olive oil; brown roast on all sides.
  • Add bouillon, onion, anchovies, bay leaf, peppercorns, allspice, vinegar, and molasses.
  • Cover and cook over low heat for 2 hours or until meat is tender.
  • Remove meat; strain pot liquid, discarding solids and returning the liquid to the saucepan.
  • Stir flour and cream into the liquid; cook, stirring constantly, until thickened.
  • Serve gravy with sliced pot roast.

DAD'S SWEDISH POT ROAST | JUST A PINCH RECIPES
This was a special Sunday or birthday dinner dad used to fix. We all loved it but it took us years to get the recipe from him. I have tweaked it a bit, but it is still a yummy and simple mean that cooks over-night or while you are at work.

  • In a small bowl stir together salt, allspice, and pepper and rub all over meat. In a 6-qt heavy kettle, heat 2 Tbsp. butter and oil over moderately-high heat till foam subsides and brown meat on all sides. With tongs transfer meat to a plate. In fat remaining in kettle cook onions, stirring frequently, till golden brown. Stir in molasses, vinegar, brandy, anchovy paste, broth, water, and bay leaf and bring to a boil. Add in meat and simmer gently, covered, turning meat occasionally, 2 1/2 hrs. Stir in carrots, onions, and mushrooms and cook, covered, 30 min, or possibly till vegetables are tender. With a slotted spoon transfer roast and vegetables to a large plate and keep hot, covered. Boil braising liquid till reduced to about 2 c. and strain through a sieve into a bowl. In same kettle heat remaining 2 Tbsp. butter and whisk in flour. Cook roux over moderately-low heat, whisking, 3 min and add in strained liquid in a stream, whisking. Boil mix, whisking 1 minute, or possibly till smooth and thickened slightly. Add in cream and salt and pepper to taste and keep sauce hot. Cut roast into 1/2-inch thick slices and arrange on a platter. Spread vegetables around roast and sprinkle with parsley. Serve sauce on side. This recipe yields 6 to 8 servings.

  • Melt butter in a skillet over medium heat. While butter is melting, mix together parsley, nutmeg, onion powder, salt and pepper in a small bowl; rub on all sides of the roast. Once skillet is hot, sear the roast, browning lightly on all sides. Set the skillet aside to prepare the gravy later. Do not clean it. Preheat oven to 300 degrees. Place roast in a 2 1/2 quart oven-safe dutch oven; cover. Bake the roast for 3 hours. Heat the skillet that had been set aside earlier to medium heat; add 2 T. of the juices from the cooked roast. Stir in the flour, beef bouillon and pepper; stir well. Add 1/2 c. milk; whisk until smooth; add another 1/2 c. milk; whisk until smooth; add remaining milk; whisk until smooth. Heat until gravy is at a low boil, whisking constantly. Cook for 5-7 minutes or until gravy has thickened. It will thicken a bit more as the gravy cools. Serve the pot roast and gravy over mashed or boiled potatoes, rice or egg noodles. 8 servings.
