Swedish style herring can be difficult to find when living abroad. We used to buy ours at IKEA, but this year their selection was limited. Fresh or brined herring filets are really hard to get here in southern California, but we were lucky to find Bismarck Herring at a local European market. I then used the fish to make my own versions of pickled herring.

12 oz (340 g) pickled herring filets, (cut into bite-sized pieces)
3/4 cup (2 dl) white vinegar (5%) ((0.75 dl om 12% ättika))
1/2 cup (1 dl) water ((2.25 dl om 12% ättika))
2/3 cup (1.5 dl) sugar
10 whole allspice
5 whole cloves
1 bay leaf
1 carrot, (peeled and sliced thinly)
1/2 red onion, (peeled and sliced thinly)
2 - 3 tbsp chives, scallions or leek, (chopped)
4 tbsp mayonnaise
4 tbsp sour cream
3 - 4 tbsp fresh dill, (chopped)
2 - 3 tbsp red onion, (chopped)
2 tbsp mustard ((I prefer whole-grain))
1 tbsp Dijon mustard
1 tsp honey
1 hardboiled egg, (chopped)
4 tbsp mayonnaise
4 tbsp sour cream
1 - 2 minced garlic cloves ((to taste))
1 tbsp fresh dill, (chopped)
1 tbsp chives, scallions or leek, (chopped)
1/2 tsp Dijon mustard
1/2 tsp salt

  • Traditional pickled herring (Inlagd sill)
  • Mustard sauce (Senapssill)
  • Garlic sauce (Vitlökssill)

1 (1 lb) can pickled beet, sliced and diced small drain and reserve liquid
2 pickled herring, pieces 6 oz jars wine-flavored drained and diced small
1 green apple, cored and diced small (unpeeled)
1/2 lb new potato, cooked and diced small (unpeeled)
1/2 cup finely diced cooked beef or 1/2 cup veal
2 tablespoons yellow onions, peeled and diced small
1/3 cup finely chopped dill pickle
6 tablespoons reserved beet liquid
2 tablespoons distilled white vinegar
1 -2 tablespoon sugar
1 pinch fresh ground black pepper
salt
1/2 cup heavy cream
2 hard-boiled egg yolks, chopped or grated

Steps:

  • Mix all of the ingredients for the salad in a salad bowl. Blend all of the dressing ingredients except the whipping cream. Stir the dressing into the salt. Whip the cream and gently fold into the salad. Garnish with the chopped or grated egg yolk.
