Total Time 35 minutes

Prep Time 25 minutes

Number Of Ingredients 14

1?¼ cups all-purpose flour
2 tablespoons sugar
¼ teaspoon salt
¼ cup butter
3 - 4 tablespoon water
¼ cup sugar
3 tablespoons cornstarch
1?¼ cups fat-free milk
¼ cup refrigerated or frozen egg product, thawed
3 tablespoons frozen orange juice concentrate, thawed
2 teaspoons vanilla
3 cups fresh fruit, such as peeled and sliced peaches, sliced plums, peeled and sliced kiwifruit, strawberries, blueberries, and raspberries
2 tablespoons honey
1 tablespoon rum or orange juice

Steps:

  • In a medium bowl, stir together flour, the 2 tablespoons sugar, and 1/4 teaspoon salt. Using a pastry blender, cut in butter until pieces are the size of small peas. Sprinkle 1 tablespoon of the cold water over part of mixture; gently toss with a fork. Push moistened dough to side of bowl. Repeat with remaining water, 1 tablespoon at a time until all dough is moistened. Form into a ball.
  • On a lightly floured surface, flatten dough with hands. Roll from center to edges, forming a circle about 13 inches in diameter. Ease pastry into an 11-inch tart pan with removable bottom, being careful not to stretch the pastry. Trim even with edge of pan. Prick pastry generously with tines of a fork. Bake in a 450 degree F oven for 10 to 12 minutes or until golden brown. Cool on wire rack.
  • For filling, in a heavy medium saucepan, stir together the 1/4 cup sugar and the cornstarch; stir in milk and egg product. Cook and stir over medium heat until mixture is thickened and bubbly. Cook and stir 2 minutes more. Remove from the heat. Stir in orange juice concentrate and vanilla. Cover surface of the filling with plastic wrap; refrigerate 3 to 24 hours or until thoroughly chilled.
  • Spread cooled filling in pastry shell. Cover; chill for 1 hour.
  • Arrange fruit as desired on top of filling. Combine honey and rum. Brush fruit with honey mixture. Serve immediately, or cover and chill for up to 1 hour. Before serving, remove side of pan. Makes 10 servings.

CARAMELIZED SUMMER FRUIT TART RECIPE - NYT COOKING
Use this crunchy, flaky tart recipe as a template for any ripe summer fruit you have, adjusting the sugar and cornstarch depending on how sweet and juicy the fruit is (see Tip). Made from store-bought puff pastry that’s been coated in Demerara sugar, the crust caramelizes as it bakes, turning shiny and crisp enough to shatter when you bite down. And feel free to change up the seasonings and substitute 1/2 teaspoon ground spices or grated lemon zest for the vanilla. It’s an easy, fuss-free dessert that seems like a lot more work than it actually is. For maximum flakiness, serve this on the same day that it’s baked.

  • Bake until the pastry is puffed and deeply golden and the fruit is tender, about 30 to 40 minutes. Transfer the pan to a wire tack to cool for at least 15 minutes before serving (or up to 4 hours). If the fruit looks dry when the tart comes out of the oven, you can brush it with a little more honey while it’s still warm. Serve with whipped cream, crème fraîche or ice cream.

  • Heat oven to 400 degrees F. Line 2 large baking sheets with parchment paper. Slice stone fruit and strawberries (if using). Per tart: Toss 1/2 cup fruit (in any combination) with 1/2 teaspoon sugar. Let the fruit sit, tossing occasionally, for at least 10 minutes. Meanwhile, roll each pie crust into a 12-inch circle. Using a small bowl (about 5 1/2 inches wide) as a guide, cut 3 circles from each pie crust. Place the crusts on the prepared baking sheets. Divide the fruit among the circles, leaving a 1-inch border. Crimp the border. Lightly brush the crusts with water and sprinkle each with 1/2 teaspoon sugar. Bake until the fruit is bubbling and the crust is golden brown, 20 to 25 minutes. Let tarts cool for 10 minutes. Meanwhile, in a small bowl, whisk together the jam and lemon juice. Gently brush over the fruit while the tarts are still warm. Serve warm or at room temperature.
