2 cups white sugar
1 cup butter, softened
2 eggs
1 tablespoon grated lemon zest
1/4 cup lemon juice
1 teaspoon vanilla
3 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cream of tartar
granualated sugar

Steps:

  • Cream sugar, butter, eggs, lemon zest, juice and vanilla in large mixing bowl until smooth.
  • Stir in flour, baking soda, salt and cream of tartar until well blended.
  • Refrigerate 1 hour.
  • Shape dough into 1 inch balls. Roll in sugar. Place 2 inches apart on prepared cookie sheet.
  • Bake for 15 to 20 minutes in a 325 degree oven or until light golden brown.
  • Cookies will be soft in the centre.
  • Cool on sheet for 5 minutes, then transfer to rack to cool completely.

1 cup butter
1?½ cups white sugar
3 eggs
3 cups sifted all-purpose flour
3 teaspoons baking powder
1 tablespoon milk
2 teaspoons vanilla extract

Steps:

  • Cream the butter and sugar together until light and fluffy. Blend in eggs and beat well. Sift together flour and baking powder; add to creamed mixture. Add milk and vanilla; mix well.
  • Cover and chill for 1 to 2 hours.
  • Roll very thin. Cut with cookie cutter dipped in flour. Place on greased cookie sheet. Bake at 400 degrees F (200 degrees C) for 6 to 8 minutes.
