1 lb fresh sugar snap peas
2 Tbsp sesame oil (or olive oil)
1/4 tsp sea salt
1/2 Tbsp black sesame seeds

Steps:

  • 1. To prepare the sugar snap peas, remove and discard the stem and the string from each pod. There may be tough “strings” at the seams of the pods that need to be removed before being eaten, but stringless varieties are also now available.
  • 2. Bring a large pot of water to a boil over medium-high heat then add the sugar snap peas. Allow to boil for 5 minutes, drain promptly and then immerse in ice water until cold.
  • 3. Drain peas from the chilled water and toss in a bowl with sesame oil, sesame seeds, and sea salt until evenly coated. Serve at room temperature, chilled, or warm. (Read on to learn how to quickly prepare them stir-fried!)

1 tablespoon olive oil
1 tablespoon chopped shallots
1 teaspoon chopped fresh thyme
kosher salt to taste

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Spread sugar snap peas in a single layer on a medium baking sheet, and brush with olive oil. Sprinkle with shallots, thyme, and kosher salt.
  • Bake 6 to 8 minutes in the preheated oven, until tender but firm.
