These simple but fun sugar buns taste best when they're still warm from the oven.

Yield Makes 12 sugar buns

Number Of Ingredients 6

1/2 cup (1 stick) unsalted butter, room temperature, plus more for muffin tins
1 cup sugar
1 1/2 teaspoons ground cinnamon
1/4 teaspoon salt
AP flour, for rolling
1 3/4 pounds Yeast Dough, room temperature

Steps:

  • Generously grease one 12-cup muffin tin with softened butter. Set aside. In medium bowl, combine sugar, cinnamon, and salt, and mix until well blended. Set aside.
  • Turn yeast dough out onto a lightly floured work surface and roll into an 18-by-10-inch rectangle. Brush dough with 2 tablespoons unsalted butter and liberally sprinkle with one-third of the cinnamon-sugar mixture.
  • Beginning with the long side facing you, tightly roll dough away from you into a log; pinch edge of dough to seal. Cut dough crosswise into 1 1/2-inch pieces. Place each cross-sectional piece into prepared muffin cup and lightly cover with plastic wrap. Place muffin tins in warm place until buns double in size, about 45 to 60 minutes.
  • Preheat oven to 350 degrees.
  • Once dough has doubled in size, remove plastic wrap and place on middle rack in oven. Bake until golden and puffed, about 22 to 24 minutes.
  • Remove from oven and cool slightly on wire rack. In the meantime, melt the remaining 6 tablespoons butter in a small saucepan over medium-low heat. Remove buns from muffin tins. Brush liberally with melted butter and gently roll in remaining cinnamon-sugar mixture. Serve warm.

¼ cup granulated sugar
2 tablespoons packed light brown sugar
1 teaspoon ground cinnamon
¼ teaspoon salt
1 17.3 ounce package frozen puff pastry (2 sheets), thawed but still cold
6 tablespoons unsalted butter, softened

Steps:

  • Preheat oven to 375°F. Coat a muffin pan with nonstick cooking spray.
  • Combine granulated sugar, brown sugar, cinnamon, and 1/4 tsp. kosher salt in a small bowl. Sprinkle a work surface with 1 Tbsp. of the sugar mixture. Unfold one sheet of puff pastry onto sugar mixture, short side facing you. Gently roll pastry with a rolling pin to press in sugar.
  • Using a small spatula, spread 2 Tbsp. butter over the puff pastry. Sprinkle with 2 Tbsp. of the sugar mixture. Cut into six equal strips and roll each strip into a coil. Place pieces in muffin cups. Repeat with the second sheet of puff pastry.
  • Bake 30 to 35 minutes or until golden brown and puffed. Meanwhile, melt the remaining 2 Tbsp. butter. Let buns cool 2 minutes in pan then brush tops with melted butter. Working one at a time, remove buns from pan and roll in remaining sugar mixture. Serve warm or at room temperature. Makes 12.

Sprinkle 1 Tbsp of the granulated sugar mixture onto a clean work surface and place 1 sheet of puff pastry on top. Sprinkle with another Tbsp of the granulated sugar mixture. Using a rolling pin, roll over the pastry once to help the sugar stick. Cut the pastry into 5 equal strips. Working with 1 strip of dough at a time, dip a marshmallow in the butter, then coat in the brown sugar mixture. Place on one end of the pastry strip and roll up. Pinch the pastry together on one end to create a seam, covering the marshmallow. Repeat with the remaining strips. Place the rolls, seam-side down, in the holes of a nonstick muffin pan and bake until golden brown and puffed, 30 to 35 minutes. Immediately remove the sugar buns from the pan and transfer to a serving dish or wire rack (for easiest cleanup, remove any melted marshmallow on the pan while it’s still warm).
