Celebrate Burns Night properly with this delicious veggie haggis filled with lentils, mushrooms and seasoning. Serve with golden neeps and tatties

2 tbsp vegetable oil
2 onions , finely chopped
2 garlic cloves , crushed
2 carrots , grated
250g mushrooms , finely chopped
25g sunflower seeds
1 ½ tsp ground coriander
1 tsp nutmeg
½ tsp white pepper
1 tsp Marmite
50g pearl barley , rinsed
1 x 390g tin green lentils
50g porridge oats
100g vegetable suet
string
muslin

Steps:

  • Pour the oil into a large non-stick frying pan and fry the onion gently over a low heat until it is very soft, this may take up to 15 mins. Add the garlic, grated carrot, chopped mushrooms and sunflower seeds. Season with salt and black pepper then add the other spices. Let it cook down for 5 mins to reduce some of the moisture from the vegetables. Add the Marmite and pearl barley and 200ml water. Bring to the boil, cover and cook for 30 mins or until all the liquid has been absorbed and the pearl barley is tender. Take the pan off the heat and tip the mixture out onto a large roasting tin so it can cool quickly. Once cold stir in the lentils, oats and vegetable suet.
  • When you want to cook the haggis spread it out on a large piece of baking parchment. Roughly shape it into a log then roll the paper up and twist the ends so it is completely sealed. Wrap up in muslin and tie the ends securely with string.
  • Heat a large pan of boiling water then slowly lower the haggis into it. Reduce the heat to a simmer and cook gently for 1hr. Unwrap the parcel and serve with neeps and tatties.

Suet pastry is part of British culinary heritage which can be used for steamed and boiled sweet and savoury puddings. For a sweet pudding, see our Apple and Blackcurrant Sponge Pudding.

150 g Doves Farm Organic Self Raising White Flour
75 g shredded suet (or vegetarian suet)
2 tbsp sugar for sweet puddings
pinch of salt for savoury puddings
75 ml milk
350 g cooked filling or fresh fruit
butter, for bowl
flour, for dusting

Steps:

  • Suet Pastry Rub some butter around the inside of a 1.1lt/2pt pudding bowl. Put the flour and suet into a mixing bowl and stir to combine. For a sweet pudding add two spoons of sugar, for a savoury pudding, add a pinch of salt. Add the milk and stir to mix. Using your hands, gather everything together into a smooth dough. Sweet or Savoury Filled Suet Pudding Dust the work surface and pastry with flour. Cut off a third of the pastry and reserve this for the lid. Roll the larger piece of pastry into a 23cm/9” circle and lift the pastry into the pudding bowl. OR put the pastry into the bowl and using your fingers, press it into the base and up the sides. Brush the top edges of the pastry with water. Add your filling so that the pudding bowl is three quarters full. Roll out the remaining pastry into a circle the diameter of the top of the dish. Transfer the pastry circle to the bowl. Lift over, press and pinch the pastry around the edges of the bowl to join the circle. Brush a piece of parchment or greaseproof paper with butter and place it loosely, butter side down on the pudding. Cooking the Pudding in a Saucepan Cover the pudding bowl with aluminium foil, tucking in well at the outer rim. Stand the pudding bowl in the bottom of a large saucepan and add boiling water until it comes halfway up the pudding bowl. Put the lid on the saucepan and simmer gently for 2 hours. Lift the lid occasionally and add more boiling water to keep the level halfway up the pudding bowl. Carefully remove the pudding from the saucepan. Remove the foil and run a warm knife around the inside edge of the basin. Put a warm plate on top of the pudding bowl, carefully invert the pudding and let it slide onto the plate. Keep warm until serving. Cooking the Pudding in a Microwave Cover the pudding with cling film and cut a hole in the top for steam to escape. Put the pudding bowl into the microwave and cook on full power for 7 minutes. Leave to stand for 2 minutes. Remove the cling film and parchment and run a warm knife around the inside edge of the bowl. Put a warm plate on top of the pudding bowl, carefully invert the pudding and let it slide onto the plate. Keep warm until serving.

GET AHEAD Preheat the oven to 180°C/350°F/gas 4. Scrub the squash, carrots and beets, and chop into 3cm chunks. Peel and quarter the onions. Place it all in a roasting tray, keeping each veg separate. Strip over the thyme leaves, drizzle with 2 tablespoons of olive oil, and add a pinch of sea salt and black pepper, jiggling the tray to coat. Roast for 1 hour, then remove and leave to cool. Soak the porcini in 100ml of boiling kettle water. Place the flour, baking powder, suet and grains in a large bowl, crumble in the chestnuts and add a pinch of salt and pepper. Coarsely grate in the Cheddar and finely grate in half the nutmeg. Scoop out the porcini, finely chop with the sun-dried tomatoes and add to the mix, then pour in the porcini soaking water, discarding just the last gritty bit. Beat the egg into the milk, and stir it all together. Mix in the cool roasted veg, taking care not to break them up, and adding an extra splash of milk to bring it together, if needed. Generously grease a 2-litre non-stick bundt tin, pudding basin or 23cm springform cake tin with butter, pack in the mixture, cover with greaseproof paper and a tight double layer of tin foil, then refrigerate overnight. TO SERVE Preheat the oven to 190°C/375°F/gas 5. Roast the veggie crown above the meat for 1 hour 15 minutes, or until crisp at the edges, then turn out, slice and serve. It will sit happily, covered, for up to 40 minutes before serving, if needed.

    1. Preheat the oven to 180°C/350°F/gas 4.
    2. Spread out the nuts and seeds on a baking tray and toast in the oven for 5 to 6 minutes. Transfer to a food processor, along with the chestnut purée, suet and maple syrup, and blitz until it comes together into a ball. It will be sticky to begin with, so stop and scrape the sides as you go.
    3. Place a large sheet of greaseproof paper on a work surface and sit the dough on it. Then, with lots of gluten-free flour on your hands and rolling pin, roll out the dough as thinly as possible (less than 5mm).
    4. If you’re making individual tartlets, oil and flour four 10cm loose-bottomed tart tins, then cut the pastry to size. For 1 large tart, roll out the dough and cut to the size of a large, shallow baking tin, and transfer to the tin using a fish slice.
    5. Prick the pastry all over with a fork, cover with greaseproof paper, fill with baking beans or rice and bake blind for 12 to 15 minutes. Leave to cool in the tray, and keep the oven on.
    6. Meanwhile, slice the mushrooms. Heat 1 tablespoon of rapeseed oil in a pan over a medium heat, then sauté the mushrooms for 6 to 8 minutes, until golden. Remove and set aside.
    7. In the same pan, heat 1 tablespoon of rapeseed oil and wilt the spinach (or heat through if frozen) along with the pepper. Blitz the spinach, avocado flesh, tofu, nutmeg and lemon juice in a food processor until smooth.
    8. Thinly slice the sweet potato using a vegetable peeler or mandolin, creating a pile of peelings. Heat a drizzle of olive oil in a small pan, then fry the peelings over a high heat, turning occasionally, for 4 to 5 minutes, until just turning crisp.
    9. Assemble the tart by spreading the spinach mixture over the baked and cooled tart base. Lay the mushrooms on top, and decorate with the sweet potato slivers and a scattering of toasted pine nuts. Eat at room temperature, or heat it up, if you like.
