Steelhead Trout Bake with Dijon Mustard Recipe | Allrecipes image

This is really yummy - not overpoweringly mustardy! And, after all, any recipe that begins with white wine has to be good! It's not oily or buttery or anything. I've made it with salmon, and it's equally tasty.

cooking spray
1 pound skinless steelhead trout fillets
¼ cup dry white wine
2?½ tablespoons Dijon mustard
2 cloves garlic, pressed
1 tablespoon lemon juice
1 teaspoon dried dill weed
1 teaspoon lemon-pepper seasoning

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Arrange trout fillets in the baking dish. Mix white wine, Dijon mustard, garlic, lemon juice, dill, and lemon-pepper seasoning in a bowl; spread over the fillets, letting some run underneath the fish.
  • Bake in the preheated oven until the fish is opaque and flakes easily, 10 to 15 minutes.

1 cup quinoa, rinsed
1 cup steel-cut oats
4 cups water
Kosher salt
1 cup brown sugar, plus 2 tablespoons for sprinkling
2 tablespoons cinnamon
2 eggs, lightly beaten
1 tablespoon baking powder
1 teaspoon unsalted butter
Milk or cream and fresh berries, for serving

Steps:

  • Bring the quinoa, oats, 1/2 teaspoon kosher salt and water to a rolling boil in a large pot. Reduce heat, add the cinnamon and 1 cup brown sugar, and stir. Let the mixture simmer for 10 to 15 minutes, stirring occasionally. Once the water is absorbed into the grains, remove from heat, and let cool for 10 minutes.
  • Preheat oven to 350º. Butter an 8-by-8-inch or 11-by-7-inch baking dish and set aside. Lightly beat 2 eggs, then slowly add them to quinoa and oats mixture, stirring constantly. Add the baking powder and mix well. Transfer the mixture to the baking dish, and sprinkle 2 tablespoons brown sugar on top. Bake, uncovered, 25 to 35 minutes or until bubbly and brown on top. Let sit for 5 to 10 minutes, then serve with fresh fruit and milk or cream.

This is from McCann’s website. I love that you can use the microwave and not have to worry about scorching your pot on the stovetop. Of course, you can always use a double boiler, but that can take a while. I always enjoy steel cut oats because they are more nutritious than rolled oats and have a nice, nutty texture. Note: Cooking times may have to be adjusted for your microwave oven wattage. I have 1000 watts and had to cook 5 minutes covered and 11 minutes uncovered.
