Nothing brings the family together like our Sage Sausage Stuffing. This combination of fresh vegetables, herbs and our Jimmy Dean® Sage Pork Sausage Roll will make this side dish a holiday staple!

Pork Sausage Rolls: Sage
1½ cups chopped celery
onion, chopped
chopped or coarsely grated carrots
garlic, minced
dried rosemary
(10 ounces) frozen spinach, thawed and drained
(8 ounces) fresh mushrooms, sliced
(14 ounces) cubed herb seasoned stuffing mix
chicken broth
egg, lightly beaten

Steps:

  • Preheat oven to 325°F. Cook sausage, celery, onion, carrots, garlic and rosemary in large stockpot over MEDIUM-HIGH heat for 8 minutes. Add spinach and mushrooms; cook 2-3 minutes longer or until sausage is thoroughly cooked, stirring frequently. Remove from heat.
  • Add stuffing mix, chicken broth, black pepper and egg; mix just until blended.
  • Spoon into lightly greased 13 x 9-inch baking dish; cover with foil.
  • Bake 50 minutes to 1 hour or until thoroughly (160°F).

My Mom's Sausage & Sage Dressing is the only one we have ever had on Thanksgiving.  It's my Grandma's recipe, and this stuffing is the main reason our family loves the Thanksgiving meal.

Number Of Ingredients 6

2 pounds sage flavored pork sausage
2 large packages Pepperidge Farm bread crumbs (1 Herb Seasoned, 1 Country Style)
3 cups celery, chopped
1 cup onion minced, divided
1 quart chicken broth
2 stick of butter, melted (1 cup)

Steps:

  • In a skillet over medium heat, brown sausage until cooked. Remove from pan and set aside.
  • In that same skillet, melt butter. Add celery and onion and cook until tender. About 10 minutes. Cool slightly so you are able to touch it for the next step.
  • In a big bowl, combine sausage, celery, and onion with your bread crumbs. Working with your hands, add small amounts of broth until dressing is moist, and forms into a ball.
  • Stuff your turkey full. (we typically make a 20 pound bird) Wrap remaining stuffing in heavy duty foil. * see notes to prepare in a casserole dish
  • Bake turkey according to size and package instructions for a stuffed bird.
  • To bake the foil package, place in oven with turkey about 45 minutes before turkey is done.
  • When turkey is cooked, remove stuffing immediately.

    6. Place the turkey breast in a roasting tin, cover with tin foil and roast for 1 hour and 20 minutes (or 40 minutes per kilo), removing the foil for the last 20 minutes to allow the bacon to crisp up. Pierce the centre of the turkey and check that the juices run clear.
    7. Transfer the turkey to a board, cover with foil and a clean tea towel and allow to rest for 20 to 30 minutes before serving.
