These are super tasty, creamy, and cheesy stuffed pasta shells with ground beef for a weeknight dinner.

Ingredients

½ pound jumbo pasta shells,
2 tbsp olive oil;
1 small yellow onion, chopped;
salt and pepper, to taste;
3 garlic cloves, minced;
1 pound ground beef;
2 tbsp Italian seasoning;
2 cups spaghetti sauce;
2 cups ricotta;
1 cup mozzarella cheese, shredded;
½ cup parmesan cheese, grated;
1 large egg, beaten.

Steps:

Preheat the oven to 350°F.
Add jumbo pasta shells to the boiling water. Cook until al dente according to package directions. Then, drain the jumbo pasta shells and rinse under cold water. Set aside.
In a large skillet, heat the olive oil. Add chopped onion, salt, and pepper. Saute for 4-5 minutes. Then, add minced garlic. Cook for 1-2 minutes until fragrant. Add ground beef, break it up into chunks. Cook until browned. Then, add Italian seasoning and 1 cup of spaghetti sauce. Stir until combined. Then, remove the skillet from the heat.
In a bowl, mix together ricotta, mozzarella, parmesan, and beaten egg. Then, add this cheesy mixture to the beef mixture. Mix until combined.
Grease a 9x13 inch baking pan with cooking spray. Then, add the remaining 1 cup of spaghetti sauce. Spread evenly.
Fill each jumbo pasta shell with a cheesy beefy mixture. Place them on the prepared baking pan. Top with extra parmesan and mozzarella cheeses. Bake in the preheated oven for 25-30 minutes. Enjoy!

20 uncooked jumbo pasta shells
1 pound ground beef
1 large onion, chopped
1 carton (15 ounces) ricotta cheese
2 cups shredded Italian cheese blend, divided
1/2 cup grated Parmesan cheese
1/4 cup prepared pesto
1 large egg
1 jar (26 ounces) spaghetti sauce, divided

Steps:

Cook pasta shells according to package directions to al dente; drain and rinse in cold water. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. In a large bowl, combine the ricotta cheese, 1-1/2 cups Italian cheese blend, Parmesan cheese, pesto, egg and half of the beef mixture., Spread 3/4 cup spaghetti sauce into a greased 13x9-in. baking dish. Spoon cheese mixture into pasta shells; place in baking dish. Combine remaining beef mixture and spaghetti sauce; pour over shells. Sprinkle with remaining cheese. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. Preheat oven to 350°. Cover and bake for 40 minutes. Uncover; bake until cheese is melted, 5-10 minutes longer.
