This simple, fresh strawberry cake is the perfect springtime dessert. Besides being wonderfully easy to slice and serve for a crowd, sheet cakes (like this pink beauty) are great for entertaining because they require no special cake frosting skills to look impressive.

1?¼ cups (10 oz.) unsalted butter, softened
2?½ cups granulated sugar
5 large eggs
1 tablespoon fresh lemon juice (from 1 lemon)
1?½ teaspoons vanilla extract
3 cups (about 12 3/4 oz.) all-purpose flour
1 (3-oz.) pkg. strawberry-flavored gelatin
1 teaspoon baking soda
1 teaspoon table salt
1?¼ cups whole buttermilk
1?½ cups diced fresh strawberries, divided
2 (12-oz.) containers ready-to-spread vanilla frosting (such as Betty Crocker)
10 Fresh strawberries, halved

Steps:

  • Preheat oven to 350°F. Line a half-size (18- x 13- x 1-inch) rimmed baking sheet with parchment paper; lightly grease parchment with cooking spray.
  • Beat butter in a large bowl with an electric mixer on medium speed until creamy. With mixer running, gradually add sugar, and beat until light and fluffy, about 3 minutes. Add eggs, 1 at a time, beating until well combined after each addition. Beat in lemon juice and vanilla.
  • Stir together flour, gelatin, baking soda, and salt in a separate bowl. Add flour mixture and buttermilk alternately to butter mixture in 5 additions, beginning and ending with flour mixture, beating on low speed just until blended after each addition. Stir in 1 cup chopped strawberries. Spread mixture in prepared baking sheet. Bake in preheated oven until a wooden pick inserted in center comes out clean, about 30 minutes.
  • Cool cake completely on baking sheet on a wire rack, about 1 hour. Finely chop remaining 1/2 cup diced strawberries and stir into vanilla frosting. Spread cooled cake with frosting. Refrigerate at least 1 hour and up to overnight. Garnish each piece with halved strawberries.

Sheet-pan pancakes feed a crowd, without your standing over a hot skillet or griddle for long periods of time. This easy pancake recipe calls for sprinkling strawberries on top of the batter, but you could personalize toppings for guests with a variety of fruits or nuts.

1?? cups all-purpose flour
2?¼ teaspoons baking powder
1?¼ teaspoons baking soda
1 teaspoon kosher salt
3 cups low-fat buttermilk
3 large eggs
½ teaspoon almond extract
1 tablespoon pure maple syrup, plus 1/2 cup for serving
? cup unsalted butter, melted
1?¼ cups thinly sliced fresh strawberries

Steps:

  • Preheat oven to 500 degrees F. Lightly coat an 18-by-13-inch rimmed baking sheet with cooking spray.
  • Whisk whole-wheat flour, all-purpose flour, baking powder, baking soda and salt in a large bowl. Whisk buttermilk, eggs, almond extract and 1 tablespoon maple syrup in a medium bowl. Whisk wet ingredients into dry ingredients. Gently whisk in melted butter. The batter will be lumpy. Let stand for 5 minutes.
  • Spread the batter in an even layer on the prepared baking sheet. Arrange strawberries on top.
  • Transfer to the oven and immediately reduce temperature to 425 degrees F. Bake the pancake until golden brown and a toothpick inserted in the center comes out clean, 14 to 16 minutes. Cut into 12 pieces and serve with remaining 1/2 cup maple syrup.

    Add one-third of the flour, and all of the baking powder and kosher salt to the egg mixture and whisk to combine. Add one-half of the rosé wine and whisk to combine completely. Add another one-third of the flour, then the remaining rosé wine, and the remaining flour; whisking well to combine between each addition. Scrape the sides of the bowl with a rubber spatula and whisk in any unincorporated bits. Transfer the batter to the prepared sheet pan. Bake until a toothpick comes out clean, about 16 to 18 minutes. Remove the cake from the oven and cool completely, about 1 hour. For the glaze: In a microwave safe bowl, combine the strawberry jam and rosé wine. Microwave on high for 15 seconds then whisk until smooth. Add in the powdered sugar and whisk until smooth. Whisk in the melted butter.  Pour the glaze over the cake and spread to cover in a thin layer. Serve with fresh, sliced strawberries.
