Lightly spiced, soft cookies with a strawberry jam filling. Mmmmm! These are my favorite of the cookies mom makes every Christmas.

Yield 3 dozen cookies

Number Of Ingredients 13

1 cup shortening
1 cup white sugar
1 cup brown sugar
¼ cup milk
1 teaspoon vinegar
2 eggs
1 teaspoon vanilla extract
3?½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground nutmeg
6 tablespoons strawberry preserves, or as needed

Steps:

  • Beat shortening, white sugar, and brown sugar in a bowl using an electric mixer until creamy and smooth.
  • Mix milk and vinegar together and let stand 5 minutes to make 'sour milk'. Stir sour milk, eggs, and vanilla extract into shortening mixture.
  • Sift flour, baking powder, baking soda, salt, and nutmeg together in a large bowl. Mix flour mixture into shortening mixture until incorporated. Refrigerate until fully chilled, 2 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Roll dough to a 1/8-inch thickness on a floured surface; cut into 2-inch rounds using a cookie cutter. Spoon 1 teaspoon preserves into the center of half the cookies; cover with remaining cookies. Lightly press edges of cookies together using a fork. Cut criss-cross slits into the top of each cookie using a knife. Arrange cookies on an ungreased baking sheet.
  • Bake in the preheated oven until cookies are golden, 13 to 15 minutes.

1 cup unsalted butter, softened
1/2 cup sugar
2 large eggs, room temperature
1-1/2 cups finely ground pretzels (about 6 ounces)
1 cup all-purpose flour
1 teaspoon baking powder
2/3 cup semisweet chocolate chips, melted
1/3 cup seedless strawberry jam
Confectioners' sugar

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add 1 egg at a time, beating well after each addition. In another bowl, mix ground pretzels, flour and baking powder; gradually beat into creamed mixture. Divide dough in half. Shape each into a disk. Cover and refrigerate until firm enough to roll, about 1 hour., Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. Cut with a floured 3-1/2-in. tree-shaped cookie cutter. Using a floured 1-3/4-in. tree-shaped cookie cutter, cut out the centers of half of the cookies. Place solid and window cookies 1 in. apart on ungreased baking sheets., Bake until edges are light brown, 8-10 minutes. Remove from pans to wire racks to cool completely., Spread melted chocolate onto bottoms of solid cookies; let stand until firm. Spread jam over cooled chocolate; top with window cookies. Dust lightly with confectioners' sugar.
    Freeze option: Freeze undecorated cookies in freezer containers. To use, thaw in covered containers and decorate as directed.

2019-05-27 · Hi Monica, (1) I use the paddle attachment on most of my frosting recipes, except the Whipped Cream Frosting. (2) It can be either. My preference is frosting the cake (cupcakes, etc.) It just says me time the next day. (3) You can keep it up to a week in the fridge or a month in the freezer. I usually put it in a ziploc bag or airtight container to store it. Hope this info helps!
