3 cups chopped strawberries
1/4 cup granulated sugar 
1 tablespoon cornstarch 
1 lime, zested and juiced
2 1/2 cups all-purpose flour
2 1/2 sticks (20 tablespoons) salted butter, cubed and chilled, plus more for the pan
1 cup packed brown sugar 
1 tablespoon baking powder 
1/2 cup heavy cream 
2 tablespoons turbinado sugar 
1 1/2 cups powdered sugar
2 to 3 tablespoons fresh lime juice 

Steps:

  • For the filling: Preheat the oven to 375 degrees F.
  • Add the strawberries, granulated sugar, cornstarch and lime zest and juice to a bowl. Toss to combine and set aside.
  • For the crust and crumble: In a food processor, combine the flour, butter, brown sugar and baking powder. Pulse until a loose crumb forms; continue to pulse as you add the cream.
  • Grease a 9-by-13-inch pan with butter. Dump two-thirds of the flour mixture onto the prepared pan and press flat. Top with the strawberry mixture, spreading it into an even layer. Sprinkle over the remaining flour mixture, followed by the turbinado sugar.
  • Bake the bars until the top is golden and the strawberry layer is thick and bubbling, 28 to 30 minutes. Remove and allow to cool.
  • For the icing: Whisk together the powdered sugar and lime juice until smooth.
  • Cut the cobbler into small squares and drizzle with the icing. Add to a platter and serve.

FOR THE STRAWBERRY RHUBARB FILLING:
1 1/2 lb. Rhubarb, Sliced Into 1/2-inch Pieces
1 lb. Strawberries, Hulled And Quartered
3/4 c. Sugar
2 tbsp. Cornstarch
2 tbsp. Instant Tapioca
1 tbsp. Freshly Squeezed Orange Juice
1 tsp. Orange Zest
FOR THE DOUGH:
1 c. All-purpose Flour
3 tbsp. Packed Brown Sugar
2 tsp. Baking Powder
1/4 tsp. Kosher Salt
3 tbsp. Unsalted Butter, Chilled And Diced
1/3 c. Milk
2 tbsp. Sugar

Steps:

  • Preheat oven to 375° F.For the strawberry rhubarb filling:In a medium bowl, toss rhubarb and strawberries with sugar, cornstarch, tapioca, orange juice, and orange zest. Let stand for 15 minutes, stirring every 5 minutes.For the dough:In a large bowl, whisk together flour, brown sugar, baking powder, and salt. With a rigid pastry blender or a fork, cut butter into dry mixture until incorporated and crumbly. Drizzle milk evenly over the top of the mixture and then stir together just until evenly moistened. Do not over-mix. Dough will be thick.To assemble the cobbler:Transfer strawberry rhubarb filling to a deep baking dish (the oval dish shown in my photos is about 9 x 11 inches, with tall sides). Using a spoon, drop dough onto top of strawberry rhubarb filling, dividing evenly into 8 dough mounds. Sprinkle the 2 tablespoons of sugar evenly over the dough mounds. Bake, uncovered, for about 40 minutes, until biscuits are browned and filling juices are thickened and bubbling nicely. Remove from oven to a cooling rack. Let cool for about 30 minutes before serving. This is great with a scoop of vanilla bean ice cream—or a dollop of whipped cream, or a splash of cream.

I think some of her pics make some of us "foodies" drool. In the past I have substituted the blackberries for Strawberries (YUM!) and peach because those were the fruits I had on hand. Either way it was good and gone! I'm never not satisfied after trying one of her recipes. And they all make the house smell so good!
