Easy, French, Comfort Food! The batter is much like a crepe mixture and is simply poured over berries and baked until puffed and golden brown. As the berries rise to the top, the bottom layer is in between a cake and custard. I used two, 16 ounce ramekins, but you could also use a baking dish or cast iron pan. Put a sheet of tin foil underneath your baking dish(es) in case the juices from the berries bubble over (so you don’t have to clean your oven). In addition to dusting the Clafouti with powdered sugar you can add whipped cream, ice cream, crème fraiche, Reddi-wip®, you name it!

Pam cooking spray
8 -12 ounces strawberries
1/2 teaspoon cornstarch
1 teaspoon granulated sugar
3 eggs
1 cup milk
1 teaspoon vanilla
1/4 cup granulated sugar
1/8 teaspoon salt
1/8 teaspoon cinnamon
1/4 teaspoon baking powder
1/2 cup all-purpose flour
powdered sugar, for dusting

Steps:

  • Preheat oven to 350°.
  • Spray Pam on two, 16 oz baking dishes.
  • Rinse, hull and slice strawberries in an egg slicer (leave them a little wet); toss strawberries with cornstarch and 1 tsp sugar until evenly coated; evenly distribute strawberries in bottom of dishes and set aside.
  • Whisk eggs, milk and vanilla. Then whisk in ¼ cup sugar, salt, cinnamon, baking powder and flour until frothy and lumps are gone. You can use your blender/food processor.
  • Pour batter over strawberries.
  • Bake until puffed, golden brown, about 40 minutes.
  • Let stand for 10 minutes.
  • Dust with powdered sugar and serve warm.

As the desserts baked in the oven, the cherry pits released a subtle almond flavor.

Milk, 250ml (1 cup)
Sugar, 100g (½ cup)
Eggs, 3
Lemon, 5g (1 tbsp, peel
cake flour, 120g (1 cup)

Steps:

  • For such a fancy dessert, this recipe is rather easy. Just a few simple steps to create a delicious masterpiece!
  • Cut the strawberries in half and set aside.
  • In a small bowl, beat the eggs and the sugar with a hand mixer until smooth.
  • Add the lemon peel and flour.
  • Add the milk and beat with the hand mixer until fully combined.
  • Grease a springform tin and line with parchment paper. Layer the strawberry halves on the bottom of the pan.
  • Pour the mixture over strawberries and bake at 180°C/350°F for 35-40 minutes.
  • Sprinkle with powdered sugar and serve!

  • Wash the strawberries and drain in a colander. Pat dry with paper towels. Hull the strawberries and slice them lengthwise. In a blender, add the flour and almonds and grind finely. Add the cornstarch, pinch of salt and blend again. Crack the three eggs into the flour mixture and whirl again, adding the milk and melted butter to get a smooth crêpe-like batter. With little butter on your fingertips, grease the ramekins. If you donâ??t have ramekins use a gratin or an eight inch baking dish. Create a layer with the strawberries in each greased ramekin. Pour the batter dividing it equally into the ramekins. I used up all four of mine with the quantity of batter I made today. Preheat oven to 350°F. Bake the Clafoutis for about 45-50 minutes. They would have set by then and puffed up nicely. You will see their edges browned. Serve them while they are still warm, either with more strawberries on top or with some ice cream or with crème fraiche. I dusted them with some homemade powdered sugar and topped them with some more slices of strawberries.
