Stove Top Stuffing W/ Cranberries | Just A Pinch Recipes image

When I was a kid, my mom would take left over corn bread & make a type of stove top stuffing & called it CUSH. SHE ADDED CHOPPED VEGETABLES LIKE ONIONS, PEPPERS & CELERY & a pinch of sage , it was similiar to dressing except she made it on top of the stove. That is what this reminded me of, my husband requested Pork Roast for dinner, but I wanted Stuffed Pork Chops, so this dish was my solution. Using ingredients from the pantry & fridge, & it was not only economical but simple, tasty & easy to put together. My husband was impressed, & WE sort of got what both of us wanted for dinner. Try it.

Number Of Ingredients 10

1 stick(s) butter
1 medium onion, chopped
1 medium red bell pepper, chopped
2-3 stick(s) celery, chopped
1 tablespoon(s) dried parsley flakes or chives
2 box(es) (12 oz. ) stuffing mix, your choice of flavor
1 box(es) seasoned salad croutons
1 box(es) chicken broth(32 oz)
1 small can cream of chicken soup (undiluted)
1 can(s) whole berry cranberry sauce (optional)

Steps:

  • Melt butter in a large skillet over medium low heat. Then add chopped vegetables and saute till transparent and tender.
  • Then add chicken broth and heat till very hot about 8 to 10 minutes. Next add all of the stuffing mix and salad croutons.
  • Stir till mixture begins to absorb liquid. Add dried parsley flakes or chopped chive, and can of cream of chicken soup. Stir to mix together.
  • Next add can of whole berry cranberry sauce and stir to mix into stuffing.Lower heat and cover with tight fitting lid and allow flavors to blend for about 5 to 10 minutes. Then turn off heat, uncover and serve.
  • PLEASE NOTE: I love cranberries in stuffing, but my husband prefers it plain, so I merely sprinkled a few whole cranberries over the top in the serving dish to show what it should look like.Cranberries adds a slightly tart flavor to the stuffing. Then removed them and just added the wholeberry cranberry sauce to my portion for dinner. My husband like everything plain and simple including me. Smile
