Mustard Greens : Taste of Southern image

Follow our step-by-step, photo illustrated recipe for making our southern style Mustard Greens. Greens dominate the fresh produce available here in the South during the winter, and we'll show you how to cook some up for a great side dish or even the main meal of the day. They'll go great with some cornbread.

Number Of Ingredients 6

2-3 bunches Mustard Greens, about 2 lbs.
¼ lb Bacon, Ham, Hog Jowl, or seasoning meat of choice
1 Onion, small
1 teaspoon Sugar
2 ½ cups Water
Salt and Pepper to taste

Steps:

  • Wash greens in cold water, 2 to 3 times, as needed, to remove any dirt, sand or bugs.
  • Adding salt to your water will kill any bugs that might be attached to the greens.
  • Remove any large tough stems from the greens and discard.
  • Remove greens from sink. Place in colander or large pot to drain.
  • Place greens in a large pot over Medium heat on your stove top.
  • Add one cup water.
  • Continue to add greens as they cook down, until all greens are in the pot.
  • Add sugar.
  • Cook greens, stirring often, for about 20-30 minutes.
  • Drain greens in a colander to remove water.
  • Dice the seasoning meat into about ½ inch cubes.
  • Chop the onion into small pieces.
  • Place a large skillet over Medium heat on your stove top. Add the seasoning meat.
  • Fry meat until lightly browned.
  • Add the chopped onion to the skillet. Saute until soft and tender.
  • Add drained greens to skillet.
  • Add 1½ cups water.
  • Cover skillet. Reduce heat slightly and let simmer for 10 minutes.
  • Add salt and pepper to taste. Stir well to combine.
  • Cover skillet. Simmer greens for about 20 more minutes on Medium-Low heat until greens are tender.
  • Serve warm and Enjoy.

Number Of Ingredients 10

2 lbs. mustard greens, such as Nature’s Greens (pre-washed/trimmed greens are often sold in 1 lb. bags)
4 cups chicken stock or broth
8 sliced bacon, diced (thick-cut is preferable)
Salt and pepper, to taste
1/2 tsp. to 1 tsp crushed red pepper flakes
1 or 2 garlic cloves, smashed
1 TBSP olive oil (or other cooking oil)
1 medium-sized sweet onion, diced (such as Vidalia)
12 TBSP apple cider vinegar
½ tsp granulated sugar

Steps:

  • In a large, lidded pot set over medium high heat, add the greens and stock. Stir and toss as they begin to cook and wilt down. Once they’ve all been moistened and are wilting, leave the greens to cook and simmer in the stock, partially covered (the lid should be fully closed) for about 10 to 15 minutes. Much of the stock will have evaporated by the point.
  • Transfer the greens to a bowl for the time being, as set aside.
  • Add a drizzle of oil to the same pot, and set the heat to medium. Cook the bacon until browned and crispy. Transfer to a plate and keep 1 TBSP of the drippings in the pot. 
  • Reduce the heat a little, if needed, and cook the onion for a couple of minutes until tender (you can add a little more oil, if necessary). Add the garlic and chili flakes and cook for another couple of minutes. Add the greens back into the pot, along with the vinegar and sugar. Stir everything and allow the greens to simmer along with the seasonings, to pick up their flavors; about 5 minutes.
  • Serve the hot greens topped with the reserved bacon.

  • In a large deep skillet or wok, heat the oil over high heat until it shimmers. Add the scallions and cook, stirring frequently, until they just begin to brown on the edges, about 2 minutes. Add the greens in handfuls, tossing to coat in oil. As they begin to wilt, keep adding them by handfuls.
    Once all the greens are in the pan, keep stirring and tossing constantly, until they darken and begin to brown and crisp on the edges. Taste to see if you like the texture. (I prefer mine with some crunch, but cook them the way you like them.) Season to taste with salt and pepper. If you want a little heat, add a pinch of red pepper flakes or a dash of hot sauce or hot pepper vinegar. Serve hot with lemon wedges.
