20-minute prawn and broccoli stir-fry with fine egg noodles and soy honey dressing

toasted sesame oil
red chilli, finely chopped
garlic, finely sliced
piece root ginger, peeled and grated
raw jumbo king prawns
long-stemmed broccoli, cut into small pieces
red pepper, deseeded and sliced
sugar snap peas
carrot, sliced into ribbons
spring onions, sliced
soy sauce
honey

Steps:

  • Cook the noodles according to the instructions on the packet. Drain and set aside.

    Meanwhile, heat 1 tbsp sesame oil in a wok or frying pan over a high heat and cook the chilli, garlic, ginger and prawns. Stir frequently for 2-3 minutes until the prawns are pink and cooked through. Transfer to a bowl and keep warm.

    Add the remaining sesame oil to the wok, then toss in the broccoli, red pepper, sugar snap peas, carrot and spring onions. Stir-fry for 3 minutes, until slightly tender.

    Mix the soy and honey together and drizzle into the wok. Stir well to coat the veg, then add the prawn mixture along with the noodles to the pan. Toss everything together and cook for 2 minutes, until it’s all heated through. Serve immediately.

raw king prawns, peeled and deveined

Freshly ground black pepper

small head broccoli, cut into small florets

low-sodium soy sauce

Juice of 1 lime

Steps:

  • In a large pan over medium heat, heat olive oil. Add prawns and season with salt and pepper. Cook until pink, 5 minutes, then remove from pan. Return pan to heat and heat sesame oil. Add broccoli, peas, and pepper and cook until soft, 7 minutes. Add garlic and ginger and cook until fragrant, 1 minute more. In a small bowl, whisk together soy sauce, cornflour, lime juice, brown sugar, and a pinch of chilli flakes. Add to pan and toss to coat. Add prawns and cook until heated through, 2 minutes.

  • To Prep Remove veins from the prawns. Snip off the pointed ends on the heads and tails. Trim off legs. To Cook In a large frying pan, heat 2 tbsp of oil, sauté onions until fragrant and soft. Season with ½ tsp salt and 2 tbsp tomato sauce, set aside. Heat another 4 tbsp of oil and fry prawns over high heat. When prawns are cooked, remove from pan and set aside. In the same pan, heat remaining 2 tbsp of oil and fry chopped spring onions and ginger until fragrant. Add in tomato sauce and cook until the sauce turns bright red. Add cooking wine, salt, sugar, cooked prawns and water, cook on low heat for about 2 mins. Add in the onions and thicken with corn flour mixture. Lastly add sesame oil and chilli oil (optional). Stir well and transfer to serving plate. Garnish with spring onions and chilli, serve.

This is a recipe I came up with, combining 2 different recipes. I really like this dish because it's so simple to make and healthy too. Don't let the list of ingredients turn you off, it is actually rather easy and fast to make. The list of vegetables can be substituted with what you may have already such as tomato, edamame (soybeans), corn, bell peppers, broccoli florets, bok choy, etc. Tip: Using different colored veggies makes this dish very pretty! Try to cut everything in a similar size as well. I consider this to be a family style dish, which means usually it's served alongside other dishes. So if you are serving more than 2 persons, I would suggest you add more shrimp, then serve this along with sautéed greens with garlic (i.e. spinach), and maybe add a soup to round out the meal. I usually double the ingredients and also double the amount for the broth/soup so we can soak it up with the rice. Hint: If you use dry shiitake mushrooms, use the soaking water for part of the broth (I always use it in soups now since my grandma told me about using it to add flavor to recipes).
