My Dad was a sharecropper, so when we were kids, okra was one vegetable that was always plentiful. Being a Cajun, we often used it to make what we called an okra gumbo.

- To steam okra: In a double boiler, heat water to boiling. Place the whole okra in the top of the double boiler. Cover and let steam for 10 minutes. Remove and serve. Sprinkle vinegar on the okra along with salt and black pepper to taste. Steaming okra prevents the slime that some people have an aversion to.
- To boil okra: In a medium saucepan, bring water to a boil and pour 1/4 cup vinegar in the water. Add the okra and boil for 8 to 10 minutes until okra is tender. Drain water. Add salt and black pepper to taste.

I came up with this recipe one summer when I had lots of okra and tomatoes. Everyone really enjoyed it and said how delicious it was. Friends always ask me when I’m going to cook my tomato and okra dish. Sometimes I’ll serve it over rice.

The first time I tasted steamed okra was at a “Nasikanda” stall in Kuala Lampur where it was served with rice and a local curry. The okra was crunchy and had a unique “clean” taste. There was no other seasoning but few coarse grains of salt sprinkled over them. The only drawback was that the salt was not absorbed by the okra. So when I steam okra, I slit them along their length and add the salt or other seasoning in the slit. Try this simple and quick dish as a healthy addition to your rice/chapathi and dal. I enjoy them on their own as a snack with mid- morning tea.
