- Set up a steamer, fill the bottom with water and bring to a boil. If the asparagus are very thick, peel them. Start about 2-inch down from the tip of the stalk and peel. It is not necessary to peel thin asparagus. Cut the asparagus to fit into your steamer basket. Cover and steam until the asparagus are bright green and tender, but still somewhat crisp, about 6 to 8 minutes for thick asparagus and 3 to 5 minutes for thin asparagus. Remove from the steamer and season with salt and pepper.

- Wash the clams thoroughly and remove any blemishes. They should have no odor. Heat oil in a large saucepan (with a cover) over medium heat and cook garlic and onion until translucent. Add the wine and let cook for a couple of minutes to combine the flavors. Add the clams and clam juice (or water) and cover the pan for about 10 minutes until the clams open. Discard any clams that do not open and remove clams to serving bowls. Season the juices in the pan with salt and pepper to make a sauce. Pour the sauce and melted butter over the clams.

Over the last year, we’ve seen a lot of worry on social media about how to
cook frozen salmon fillets in an Instant Pot. And no wonder! The fillets can
be overcooked in a flash. We find the best technique is to steam them on a
rack because they don’t sit in the liquid (which can break them apart,
especially during the furious boil inside the pot when the pressure is
released).
Our timing here is for medium-rare to medium salmon fillets. If you
like them cooked more thoroughly, add 1 minute to the timing for either the
MAX or the HIGH setting. But note: The size of these salmon fillets (6 ounces
each) is very important for the timing given; see the Beyond if you have
larger fillets.
