2 teaspoons toasted sesame oil
8 ounces tempeh (cut into two by 1/4 inch strips)
1/2 cup bean sprouts
4 scallions (cut into 3 in. pieces)
1/2 cup Chinese cabbage (shredded)
1/2 red bell pepper (roasted 1/2 cut into strips)
1 lemon, juice of
8 egg roll wraps

Steps:

  • Heat sesame oil in a skillet over medium heat.
  • Add tempeh and cook, turning, until golden brown on all sides; drain and set aside.
  • Combine green onions, cabbage, and bell pepper with lemon juice in a medium bowl.
  • Place one egg roll wrapper on work surface.
  • Arrange 1/8 of the vegetables, about 3 tablespoon, and a strip of tempeh close to the middle of the wrapper.
  • Fold over the corner near you, then the two sides corners.
  • Gently roll toward the far corner.
  • Moisten the edges with water, to seal the roll.
  • Arrange rolls in a steamer, and steam over boiling water for ten minutes.
  • Transfer rolls to serving platter.

1 carrot
2 ounces Mung bean sprouts
6 sprigs Thai basil
4 scallions
12 sheets Rice paper
2 ounces Rice noodles
salt
7 ounces Prawn (peeled and cooked)
3 tablespoons Chili sauce

Steps:

  • Peel carrots, halve crosswise and then lengthwise. Cut into thin slices.
  • Rinse the sprouts and drain well. Rinse basil, shake dry and pluck the leaves.
  • Rinse scallions, shake dry and cut diagonally into thin slices.
  • Place 12 rice paper sheets between two damp kitchen towels and let soften for about 2 minutes.
  • Meanwhile, soak the rice noodles in hot salted water according to package instructions. Drain in a sieve, rinse in cold water and drain well.
  • Put 2 basil leaves and 2 shrimp along with noodles, scallions, sprouts and carrots (dividing evenly) in the center of each rice paper sheet. Top each with some chili sauce.
  • Fold in sides of rice papers, then roll up firmly. 
  • Boil water in a large pot. Place spring rolls in a steamer basket set over pot, cover and steam for 4-5 minutes. Serve immediately.

You can also make your own fried shallots: slice shallots very thin. Heat vegetable oil to medium/medium high, throw in the shallots and take them out right away with the net spoon. Leave on paper towel to drain off excess oil.

  • To Prep In a large bowl, combine all the flour ingredients. Pour in oil while using your other hand to slowly knead. Then, gradually pour in water while continuing to knead and mix, getting rid of any lumps until a smooth, watery batter is obtained. To Cook Prepare a steamer over high heat. Using a rectangular tray, lightly brush it with oil. Slowly pour in a thin layer of batter to cover the tray. When the water is boiling, place into the steamer and steam for 2 mins. Then, add 2 tbsp of prawns on top of the rice roll in a straight line, about 3cm from the front edge of the rice roll layer. Sprinkle 1 tbsp green onions. Continue to steam for another 2-3 mins until prawns are cooked. Remove from steamer and allow to cool for 2 mins. Roll the rice roll layer from the front edge to cover prawns and green onions. Repeat Step 2 and 3 with remaining batter. Mix sauce ingredients into a bowl and pour over steamed rice rolls. Garnish with spring onions and serve with some XO sauce.
