This common Chinese household steamed minced pork with salted egg is a quick fix comforting dish with simple ingredients especially for busy mothers.

300 gram Pork
2 Salted Duck Egg
to taste Fresh Ginger
to taste Spring Onion
to taste Red Chili Pepper
2 teaspoon Sesame Oil
1 teaspoon Granulated Sugar
1/2 teaspoon Salt
1/2 teaspoon Light Soy Sauce
2 teaspoon Corn Starch
3 tablespoon Water

Steps:

  • Combine Pork (300 gram) with the reserved 1/2 Tbsp of egg white, Sesame Oil (2 teaspoon), Granulated Sugar (1 teaspoon), Salt (1/2 teaspoon), Light Soy Sauce (1/2 teaspoon), Corn Starch (2 teaspoon), Water (3 tablespoon) and dash of pepper. Stir the mixture with a pair of chopsticks in one direction for about 3 minutes till sticky. Then add some Spring Onion (to taste) and Red Chili Pepper (to taste) and mix well.
  • Place minced pork mixture in a steaming dish. Flatten the minced pork mixture and place the Salted Duck Egg (2) yolks with some Fresh Ginger (to taste).
  • Steam minced pork at high heat for about 12 - 15 minutes or till cooked. Then use a pair of scissors to cut the salted egg yolks into pieces.
  • Garnish with some cut spring onion and chilli and serve immediately.

Simple and Easy Chinese Steamed Pork with salted egg

200 g ground pork
2 duck salted egg
1 inch root ginger
2 spring onions
2 garlic cloves
2 tablespoons starch
Dash of white pepper powder
2 teaspoons cooking wine
2 teaspoons sesame oil
1 tablespoon water ( , for boiled salted egg)
salt as needed ( , for boiled salted egg)

Steps:

  • Remove the rind and then mince the pork.
  • If you are using boiled duck egg (no egg white can be used): Add around 1 tablespoon of water by three batches. Each time after adding the water, stir the pork in one direction until all the water is absorbed. And remember to add some salt to your mixture since no egg white is used. Skip this step if you are using un-boiled salted duck egg.
  • Mix egg white, starch, smashed garlic, green onions and ginger, sesame oil, white peppercorn powder with minced pork in a large bowl. Mix well.
  • Transfer the mixture to steaming bowls. Flatten carefully.
  • Dig a small hole in the center to hold the yolk; Steam for around 15 to 20 minutes depending on the thickness of your meat cake.
  • Break yolk and garnish some chopped spring onion; Serve hot!

Make the garlic oil by combining the vegetable oil, sesame oil, and minced garlic in a small pan and heating over a low heat. Continue to cook the garlic until they turn golden. Take care not to burn them as the oil will become bitter. Set aside. In a bowl, combine the minced pork, soy sauce, ¼ tsp ground pepper and stir until well combine. Set aside and let marinate. To Prep Salted Eggs If salted eggs are coated in salted charcoal, thoroughly remove and clean the black substance. In a saucepan, boil the salted egg in water for 15 mins. Drain the eggs and let cool slightly before removing the shells and then cutting in to small pieces. To Prep Century Eggs If century eggs are coated in a caustic mixture of mud and rice husk, clean thoroughly before cracking them open. Cut the eggs into small pieces and set aside. To Cook In a large pot, combine the rice with 10 cups of water and add the ginger in to the pot. Cover the pot with lid and heat over a high heat until the water reaches a boil. At this point, reduce and let simmer while partially covered for at least 15-20 mins. Transfer the marinated pork in to the pot and break the pork in to smaller chunks. Cook for 5 mins. Add in the salted eggs, century eggs, salt, and the last of the pepper into the pot. Return to a simmer and continue to cook for another 10 mins or until the congee has reached a thick and creamy consistency. If the congee becomes too thick, add water back in to the pot. When the congee is at your desired level of consistency, remove from the heat and get ready to plate. To Serve To serve, ladle congee into bowls. Garnish with the garlic oil, green onions and ginger.
