Lemon and basil combine nicely into a pesto topping for steaks.

4 cloves garlic
2 cups packed fresh basil leaves
? cup pine nuts
½ cup extra-virgin olive oil
½ cup freshly grated Parmesan cheese
1?½ tablespoons fresh lemon juice
¾ teaspoon red pepper flakes
6 (6 ounce) flat iron steaks
2 large cloves garlic, minced
salt and pepper to taste

Steps:

  • Chop 4 garlic cloves in a food processor until minced. Add the basil and pine nuts, and pulse a few times to combine. With the food processor running, slowly pour in the olive oil, stopping once or twice to scrape down the sides. Place the Parmesan cheese, lemon juice, and red pepper flakes into the food processor, and pulse until blended. Season to taste with salt and pepper.
  • Rub the flat iron steaks with 2 cloves minced garlic, season to taste with salt and pepper, then set aside. Preheat an outdoor grill for medium-high heat and lightly oil grate.
  • Grill the steaks to desired degree of doneness on preheated grill, about 4 minutes per side for medium. Baste the steaks occasionally with a little of the pesto sauce. Once done, serve topped with the remaining pesto.

Delicious pan-seared flat iron steak generously coated in pesto sauce.

1-1 1/2 pound flat iron steak (can use flank if you can't find a flat iron)
1/2 cup of pesto (might need more depending on the size of your steak)
Salt
Pepper
2 tbsp butter

Steps:

  • Remove steak from package and pat dry with paper towels.
  • Generously salt and pepper both sides of the steak, and then coat with about 1/4 cup of pesto.
  • Preheat oven to 350 degrees.
  • Melt butter in a large oven-proof skillet over medium-high heat.
  • Once butter has melted, place steak in the skillet.
  • Sear for about 7-8 minutes and then turn the steak oven and sear the other side for about 5 minutes. Then place the steak in the oven to finishing cooking for 3-6 minutes, depending on how done you like your steak. The longer you bake it, the more well-done it will be.
  • After the steak finishes in the oven, remove it from the pan and let it rest on a cutting board for 3-5 minutes. Coat the steak with the remainder of the pesto sauce before slicing. You can reserve some of the pesto to top the sliced steak right before serving.

  • While I find pan roasting a steak more than an acceptable cooking option, there is something special about using the grill. In this recipe video, I show you how to grill a flank steak, which I season simply with salt and pepper, but then flavor with a bit of homemade pesto sauce.  The pesto, which is grassy, savory and delicious, chars just a bit on the grill, and gives the steak an added pop.  With a fresh salad, and maybe some potatoes on the side, this is one of my favorite summer "outdoor" dinners.  Hope you enjoy it, as much as I do. Recipe Overview and Keys to Success Any time you cook steak, you need to get a good sear/char on the outside to really develop the flavor.  The way to do that, is to use really high heat (so let the grill get going 15 – 20 minutes before you start) and don’t play around with the steak too much.  I generally flip mine just once. With flank steak, how you cut the meat has a huge impact on its tenderness.  There is a natural and pronounced grain to the meat.  Once cooked, you need to slice the meat against the grain for the most tender cut Know your doneness.  I like med-rare; You can cook to whatever you’d like, but know how to tell rare from well done.  I’d suggest you take a look at these Five Rules for the Perfect Steak.  It helps to have the steak at room temp before you start cooking. Use a good pesto.  I like my pesto recipe, but if you want to use store bought, that’s fine.  Just make sure you taste it, and like it. RECIPE FOR GRILLED FLANK STEAK WITH PESTO Ingredients (for about 2 people) 1/2 cup of basil pesto 1 lb cut of flank steak Olive oil Salt and pepper Making the Flank Steak and Pesto Take the steak out of the fridge about 45 minutes prior to cooking, and season it generously with salt and fresh ground black pepper on both sides Prepare the pesto sauce, or take it out of the freezer, or open the jar ;-) Light your grill about 15 minutes (if you’re using gas) prior to cooking the flank steak; if you’re using charcoal, get the coals going, and make sure you grill is very hot when you’re ready to start the steak Oil the steak on both sides, and lay it on the hot grill Close the lid; which creates a bit of an oven effect, and lessens the flames up Depending on the thickness of the steak, and your preferred doneness, let the steak cook, without touching, flipping, poking or bothering…for at least 4 minutes…probably more like 5.
