Grilled Crusted Steak With Lemon Butter Recipe - Food.com image

The sugar in the rub melts as the steaks cook and create a crunchy crust that is spicy sweet. The butter will mellow the peppery taste.

Number Of Ingredients 12

4 tablespoons butter, softened
1 tablespoon chopped fresh parsley
1 tablespoon fresh lemon juice
1/4 teaspoon garlic powder
4 sirloin steaks
1/4 cup ground black pepper
1 1/2 teaspoons white pepper
1/2 teaspoon red pepper flakes
1 teaspoon ground coriander
1/4 cup sugar
1 tablespoon salt
1 teaspoon garlic powder

Steps:

  • Mix together butter, parsley, lemon juice and 1/4 teaspoon garlic powder.
  • Place butter mixture in plastic wrap and roll into a log shape.
  • Chill until firm.
  • Combine black pepper, white pepper, red pepper flakes, coriander, sugar, salt and garlic powder.
  • Rub spice mix into both sides of steaks.
  • Shake off excess.
  • Place steaks on a hot grill and cook for 2 minutes.
  • Turn and cook for 2 additional minutes.
  • Move steak to a cooler section of the grill and continue to cook until desired doneness.
  • Serve each steak with a slice of the lemon butter.

2 slices fully cooked ham (1/2 inch thick)
1 lemon, halved
3 tablespoons brown sugar
2 teaspoons prepared mustard

Steps:

  • Broil ham slices 5 in. from the heat for 5 minutes. Meanwhile, slice one lemon half; set aside. Grate peel from the other half and squeeze 1 tablespoon juice into bowl. Add peel, brown sugar and mustard to juice. Turn ham over; brush with the lemon mixture. Top with lemon slices. Broil 3-4 minutes more or until ham is heated through.

  • Slice steak against the grain into thin slices, about ½” thick. In a large bowl, whisk together 3 tablespoons oil, soy sauce, honey, lemon zest and juice, and thyme. Add steak and toss until coated. Marinate for 20 minutes or up to 4 hours.  In a large skillet (preferably cast iron) over medium-high heat, heat remaining 2 tablespoons oil. Shake off excess marinade from steak and season all over with salt and pepper. Add steak in a single layer, working in batches if necessary, and cook until seared on bottom, about 2 minutes. Flip steak, then add 3 tablespoons butter, garlic, lemon zest, lemon juice, and thyme. Baste steak in butter and cook steak to your liking, about 2 more minutes for medium. Remove steak and let rest on a plate. Pour out extra sauce and save for later.  Serve steak with spinach and extra butter sauce for dipping.
