Steak Tips in the Oven | Allrecipes image

Steak tips in the oven with a very flavorful steak tip marinade that is best suited for a hearty winter dish but can be enjoyed anytime. Feel free to experiment with the ingredients because I don't think you can really go wrong.

Number Of Ingredients 12

¾ cup soy sauce
¼ cup olive oil
¼ cup balsamic vinegar
2 tablespoons brown mustard
2 tablespoons maple syrup
2 tablespoons molasses
1 tablespoon sesame oil
1 teaspoon ground cinnamon
3 whole cloves
salt and ground black pepper to taste
1 cup beef broth, or as needed
2 pounds sirloin steak tips

Steps:

  • Whisk soy sauce, olive oil, balsamic vinegar, mustard, maple syrup, molasses, sesame oil, cinnamon, cloves, salt, and pepper together in a large glass or ceramic bowl. Add steak tips and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 6 to 24 hours.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Remove steak tips from the marinade and shake off excess. Discard the remaining marinade. Put steak tips into a baking dish and fill the bottom of the dish with beef broth.
  • Bake in the preheated oven until steak tips are beginning to firm and are hot and slightly pink in the center, about 25 minutes, flipping halfway. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).

Steps:

  • Let steak sit at room temperature for 30 minutes.  Preheat oven to grill and position rack closest to heating element. On a baking tray, rub steak with 1 tablespoon oil then season generously with salt. Season with pepper if desired. Broil steak about 10 to 12 minutes, flipping halfway through. Internal temperature of steak should be 51°C for rare, 57°C for medium rare, and 62°C for medium. Let steak rest for 10 minutes before slicing, against the grain. Let steak sit at room temperature for 30 minutes.  Preheat oven to 225°C. Rub steak with 1 tablespoon oil then season generously with salt. Season with pepper if desired. Preheat a large oven-safe pan, preferably cast-iron, over high heat until hot and a drop of water immediately sizzles and evaporates. Carefully place well-oiled steak in pan and sear until a deeply golden crust forms and steak begins to pull away, 3 to 4 minutes. Flip steak then transfer immediately to preheated oven. Roast until internal temperature of steak is 51°C for rare, 57°C for medium rare, and 62°C for medium, about 8 to 10 minutes. Let steak rest for 10 minutes before slicing, against the grain.

Rub the steak all over with 1 tablespoon of olive oil, then sear on every side in a screaming-hot griddle pan, or on a hot barbecue, until pleasingly bar-marked. Strip half the rosemary into a roasting tray, sit the seared steak on top, strip over the rest of the rosemary, dot and rub over the butter, drizzle with another tablespoon of oil, then season generously with sea salt and black pepper. TO SERVE Preheat the oven to 200°C/400°F/gas 6. Roast the steak on the bottom of the oven for 20 minutes for medium-rare, or 25 minutes for medium, turning halfway and basting with the juices from the tray. Remove from the oven, spoon over the balsamic, then cover with tin foil and leave to rest for 15 minutes, basting occasionally – I like to slip a tea towel under one end of the tray, so the juices naturally gather at the other end and you can easily spoon off any excess fat into a clean jam jar (for the best roasties another day). Thinly slice and serve, drizzling each portion with resting juices. The leftovers will make an epic sarnie.
