Super quick & easy. My 16 yr old son & friends devour these up in a hurry. You may need to adjust the vegetable quantity, as some in my home prefer them without them. Hope you like them!

Yield 4 Grinders (Subs), 4 serving(s)

Number Of Ingredients 10

4 grinder rolls (A.K.A Hoagie or sub)
1 -1 1/2 lb rare roast beef, sliced thin (deli, I use Boar's Head brand)
1/3 lb sharp provolone cheese, sliced
1/3 lb mozzarella cheese, sliced
1 large sweet onion, sliced
1 large green pepper, sliced
1 lb mushroom, sliced
3 -4 tablespoons unsalted butter
nonstick cooking spray
salt & pepper, to taste

Steps:

  • 1. Melt butter in a large saute pan over medium low heat.
  • 2. Saute onions & peppers, stirring occasionally.
  • 3. Add mushrooms once the onions & peppers have softened up a bit.
  • 4. Season with salt & pepper to taste.
  • 5. Continue to cook until the vegetables are cooked through and soft, stirring occasionally.
  • 6. When veggies are almost done spray a 2nd saute pan and place over med heat.
  • 7. Add roast beef, separated into 4 portions in the pan.
  • 8. Place 1 slice of mozzarella & 1 slice of provolone over each potion of beef.
  • 9. Chop up & combine the meat & cheese together using a wooden spoon or spatula sprayed with non-stick spray.
  • 10. Season with salt & pepper.
  • 11. Spread mayo on grinder rolls (optional).
  • 12. Place beef & cheese into rolls.
  • 13. Top with veggies (optional).
  • 14. Serve immediately.

2 tablespoons canola oil
1 pound beef eye of round, cut into thin strips
Salt
Freshly ground pepper
2 small onions, thinly sliced
6 garlic cloves, minced
2 red bell peppers, thinly sliced
1 cup sliced button mushrooms
One 15-ounce can black beans, drained and rinsed
2 plum tomatoes, coarsely chopped
2 tablespoons Worcestershire sauce
1 teaspoon Hungarian hot paprika
1 tablespoon mayonnaise
Steamed white rice, for serving
4 slices of American cheese, torn

Steps:

  • In a large saucepan, heat the oil. Generously season the meat with salt and pepper and cook over high heat, stirring occasionally, until browned, 1 to 2 minutes. With a slotted spoon, transfer the meat to a plate.
  • Add the onions, garlic and a pinch each of salt and pepper to the saucepan and cook, stirring occasionally, until the onions are softened and lightly browned, about 4 minutes. Add the peppers, mushrooms and a pinch each of salt and pepper and cook, stirring occasionally, until the vegetables are softened, about 4 minutes longer.
  • Stir the meat, beans, tomatoes, Worcestershire sauce and paprika into the saucepan; if the mixture is dry, stir in 1/4 cup of water. Bring to a boil, then reduce the heat to low and simmer for 10 minutes. Remove from the heat and stir in the mayonnaise.
  • Mound the rice on plates. Top with half of the meat mixture, the American cheese and the remaining meat, then serve.
