These cookies won $10,000 for Miss Laura Rott from Naperville, Illinois in a long ago Pillsbury Baking Contest. I can remember my mother making them for us and how good they were. I still have the original recipe that my mother used and since the paper is becoming a little brittle, I'm going to copy it here so I won't damage the original.

1/2 cup firmly packed brown sugar
2 eggs
2 tablespoons water
1 teaspoon vanilla
1 (9 1/2 ounce) package Andes mints candies

  • Preheat oven to 300°. Cut two large squares of parchment paper and place on a large baking sheet. Grease with cooking spray. Into the center of 1 piece of parchment paper, place one peppermint candy. Surround with 2 concentric circles. Bake until the candies look glossy and slightly melted, about 7 minutes. Meanwhile grease 2 very small bowls (about 3” in diameter) with cooking spray and place bottom side up on working surface. Very carefully, invert the melted peppermints onto the inverted bowl, pressing against the parchment to make sure the peppermint is touching the bowl. Let set for a few minutes, then remove bowl. Serve with ice cream.

  • Heat oven to 350 degrees F. Line a 13- by 9-inch baking pan with foil, letting foil extend above pan at both ends. Melt butter in a covered 3-quart microwave-safe bowl on high or in a saucepan over medium-low heat. Add chocolate chips and microwave, stirring every 15 seconds, or cook, stirring occasionally, until chocolate melts and mixture is smooth. Remove from heat. Stir in sugar. Add eggs and vanilla and stir briskly until blended. Stir in flour. Pour into prepared pan and spread evenly. Bake 25 to 30 minutes or until a pick inserted in center comes out clean (don't overbake). Cool completely in pan on a wire rack. Frosting: Clean bowl or saucepan. Add chocolate and butter and melt in microwave on high, or over low heat, stirring often (mixture may look dried and grainy). Remove from heat. Add confectioners' sugar, sour cream, and vanilla. Beat with electric mixer until smooth. Spread over cooled brownies. Sprinkle with candy. For easier cutting refrigerate 30 minutes. Remove from pan by lifting foil at ends to cutting board. Cut in lengthwise in twelve 1-inch-wide strips. Cut crosswise diagonally into diamonds.
