Chinese Jelly Noodles Salad

1 cup Mung bean starch ( ,around 120g)
4.5 cup water ( ,divided)
2 tbsp. Szechuan style chili oil
2 tbsp. black vinegar
1 tbsp. sesame oil
½ tsp. sugar
¼ tsp. salt
¼ tsp. Sichuan peppercorn powder or oil ( ,optional)
2 tbsp. light soy sauce
2 garlic cloves ( ,minced)
1 tbsp. vegetable oil
1 tbsp. minced green onion
1 tbsp. minced coriander

Steps:

  • In a large bowl, mung bean starch with 1 cup of water. Set aside until they are well combined.
  • In a pot, boil the left 3 and 1/2 cups of water in a larger pot. Turn down the fire firstly and then stir the starch mixture in slowly. Gently stir during pouring. Heat until the mixture turns transparent.
  • Transfer out and cool down completely.
  • Then cut into small strips.
  • Place chopped garlic and half of the green onion in a bowl.Heat oil until hot. Pour the hot oil over the garlic. Mix all the other seasonings in.
  • Mix well with all the seasoning and enjoy!

The hot and sour jelly was made with cornstarch before, and it was so soft and not tasty. So the major supermarkets searched for mung bean starch, to no avail. The omnipotent Taobao is the most powerful one, and it starts work as soon as it receives it. A big bowl of hot and sour refreshing, satisfying~

60 grams Mung bean starch
1 teaspoon salt
1 tbsp Vinegar
1 teaspoon sesame oil
5 grams garlic
650 ml water
1 tbsp chili sauce
1/2 tbsp Chili oil
1 teaspoon Sugar
1 Chives

Steps:

  • Mung bean starch is mixed with water to make a thin paste, until the powder is not agglomerated
  • Pour the thin paste into the pot and bring it to a boil
  • Keep stirring midway until the starch paste becomes transparent and turn off the heat
  • Pour into a large bowl, apply some cooking oil to the bowl for demoulding, let cool and cut into pieces before eating (it can be put in the refrigerator for 2 hours to taste better)
  • Seasoning sauce: put the seasonings except the shredded green onion into a small bowl (adjustable according to taste)
  • Pour the seasoning sauce on the chopped jelly, put on the green onion, you can eat it
  • Wash the scallion leaves, gently cut the top layer with a knife from beginning to end, and press lightly with the back of the knife
  • Roll up from beginning to end, the one you pressed before will not break now
  • Cut the rolled green onion leaves into shreds. Soak the chopped green onions in water and roll them up.
