Peanut Butter Star Cookies - Hy-Vee Recipes and Ideas image

Childhood wouldn't be complete without these classic cookies. Try using a combination of different styles of chocolate in the center—you really can't go wrong.

0.75 c. of Hy-Vee peanut butter
0.5 c. of Hy-Vee vegetable shortening
1.25 c. of Hy-Vee brown sugar
3 tbsp. of Hy-Vee skim milk
1 tbsp. of Hy-Vee vanilla extract
1 Hy-Vee large egg
1.75 c. of Hy-Vee all-purpose flour
0.75 tsp. of Hy-Vee salt
0.75 tsp. of Hy-Vee baking soda
0.25 c. of Hy-Vee granulated sugar
48 Hy-Vee chocolate stars

Steps:

  • 1.

    Preheat oven 350 degrees. In a large bowl, combine peanut butter, vegetable shortening, brown sugar, milk and vanilla. Beat at medium speed until creamy; beat in egg.

  • 2.

    In a separate bowl, combine flour, salt and baking soda. Add flour mixture to peanut butter mixture, mixing until just combined.

  • 3.

    Form dough into 1-inch balls and roll in granulated sugar. Place on ungreased baking sheets. Bake 9 to 10 minutes. Immediately press one chocolate star in center of each cookie. Allow cookies to cool 2 minutes before removing from pan; cool completely before storing.

2 tablespoons canola oil
2 tablespoons sugar
1-1/2 teaspoons ground cumin
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon garlic powder

Steps:

  • Place peanuts in a small bowl; drizzle with oil and toss to coat. Combine sugar and seasonings; sprinkle over nuts and toss to coat., Transfer to an ungreased 15x10x1-in. baking pan. Bake at 300° for 20-25 minutes or until lightly browned, stirring occasionally. , Spread on waxed paper to cool. Store in an airtight container.
