2 medium zucchini squash
Salt and freshly ground black pepper
Flour
1 egg beaten with 1 cup milk
Olive Oil
12 slices whole-wheat bread, toasted
Mayonnaise
1 large onion, thinly sliced
6 slices ham, fried

Steps:

  • Slice zucchini into 1/4-inch rounds. Let stand until moisture forms on sides. Salt and pepper both sides. Dip in flour, then egg/milk mixture, then in flour again. In a deep frying pan or pot, heat about 2 inches of oil over medium heat. Fry squash until lightly browned on both sides. Drain well on paper towels. Spread toast with mayonnaise and make sandwiches with squash, onions and ham.

Butternut squash gets the parmigiana treatment in this vegetarian-friendly sammy.

1/2 cup flour
3 eggs
1 cup panko breadcrumbs
1 cup Parmigiano-Reggiano
grated
3 tablespoons rosemary
fresh
stemmed and chopped
1 butternut squash
(about 1 1/2- to 2-pounds)
peeled and cut into slices 1/4-inch thick
1/4 cup olive oil
1/2 stick butter
3 cloves garlic
finely chopped
4 long hoagie or ciabatta rolls
sliced 3/4 of the way through lengthwise to open like a book
2 cups marinara sauce
store-bought or homemade
8 mozzarella
8 basil leaves
to 10
finely chopped
2 cups potato chips

Steps:

  • Preheat oven to 350°F
  • Place three shallow dishes on a work surface
  • In the first one, add flour salt and pepper
  • In the second dish, whisk eggs with salt and pepper, and in the third dish, combine panko, parm, rosemary, salt and pepper
  • Bread all the squash slices, passing them first through the flour, then the egg, then the breadcrumbs, pressing the breadcrumbs into the squash
  • Preheat olive oil in a large pan over medium heat
  • Once the oil begins to ripple, add the squash and cook until brown on one side, about 3-4 minutes
  • Flip and cook on the other side, about 3-4 minutes
  • (You can hold cooked squash in a low oven on a baking sheet fitted with a cooling rack while you cook in batches)
  • While the squash is frying, melt butter in a small saucepan over medium heat
  • Add the garlic and reduce the heat to low
  • Let the flavors combine for about 4-5 minutes; remove from heat
  • Place 7-8 pieces of squash on the bottom side of each roll
  • Top squash with a few spoonfuls of marinara sauce then 2 slices of mozzarella
  • Using a pastry brush, brush the top of the rolls with garlic butter
  • Place sandwiches on a baking sheet and bake for 8-10 minutes until brown and bubbly
  • Remove from the oven and top with basil and chips, close the sandwich and serve

    1. On a chopping board, carefully halve the rolls across the middle using a bread knife, to give you a top and a base for each. Put to one side.
    2. Using an eating knife, cut each radish in half lengthways, then slice each radish half into 3 pieces and place into a large bowl.
    3. Cut the cucumber in half lengthways, scoop out the watery seeds with a teaspoon and discard. Slice each cucumber half into 4 pieces, then add to the bowl.
    4. Trim the carrot, then cut into 8 even-sized pieces and add to the bowl.
    5. Click apart the cauliflower florets and place into the bowl with the stalks.
    6. Pull out the pepper’s stalk, tearing out the core, then discard. Scoop out the seeds and white pith with a teaspoon, then discard. Cut the pepper into 4 slices, then cut each slice into 4 pieces. Add the pieces to the bowl.
    7. Remove the core from the apple half and place, flat-side down, on the board. Cut it into 6 even-sized pieces, then add to the bowl.
    8. Place a clean tea towel onto the chopping board and place the vegetables and chopped apple in a pile in the middle.
    9. Fold over each corner of the tea towel so your ingredients are wrapped up like a parcel – make sure there are no gaps to stop the vegetables from escaping.
    10. Carefully crush and squash the vegetables with a rolling pin until broken down into little pieces. Open up the parcel – if your pieces are still too big, wrap it back up and crush and squash again.
    11. Measure the balsamic vinegar and extra virgin olive oil into the empty bowl to make your dressing.
    12. Pick the herb leaves, discarding the stalks. Tear the leaves into small pieces, adding them to the bowl as you go.
    13. Using scissors, snip the cress or sprouting herbs into the bowl, then add the peas and sunflower seeds.
    14. Add the squashed vegetables to the bowl, then using the tips of your fingers, carefully toss them in the dressing so they’re nicely coated.
    15. Spread the base of each roll with the cottage or cream cheese, then spread the soft side of each top with the houmous.
    16. Divide the vegetable mixture equally between the base of each roll. Place the lids on top, houmous-side down, press lightly, then tuck in!
    17. Jamie's top tip: When beetroot is in season, I like to add it here for extra colour and flavour. Feel free to swap in your own favourite seasonal veg – just make sure it has a bit of crunch!
