2 pounds yellow summer squash, peeled and cubed
3 eggs, lightly beaten
1 cup (4 ounces) finely shredded sharp cheddar cheese
1 cup mayonnaise
3/4 cup crushed butter-flavored crackers (about 19)
1 medium onion, finely chopped
1 envelope buttermilk ranch salad dressing mix
1/3 cup dry bread crumbs
1/8 teaspoon paprika
3 tablespoons butter, melted

Steps:

  • Place squash in a saucepan and cover with water; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until very tender. Drain well in a fine mesh strainer, pressing water out with the back of a large spoon. , Transfer to a large bowl; mash. Stir in the eggs, cheese, mayonnaise, cracker crumbs, onion and dressing mix. , Pour into a greased 1-1/2-qt. baking dish. Sprinkle with bread crumbs and paprika. Drizzle with butter. Bake, uncovered, at 325° for 45-50 minutes or until a thermometer reads 160°.

Ritz crackers - 2 sleeves. (They should be crushed)
Parmesan (Freshly grated) - 1 cup.
Shredded cheddar - 1 1/2 cups.
Mayonnaise - 1/4 cup.
Sour cream - 1/2 cup.
Large eggs - 2 nos.
Cayenne pepper - 1/4 teaspoon.
Black pepper - to taste. (Freshly ground)
Kosher salt - to taste.
Garlic cloves - 2 nos. (Minced)
Chopped onion - 1 no.
Yellow squash - 2 lbs. (It should be sliced into half inch coins)
Butter - 4 tablespoons. (Divided)

Steps:

  • Oven needs to be preheated to 300 Degree Fahrenheit.
  • You need to grease a casserole dish. (Medium size)
  • Take a large skillet and 2 tablespoons butter must be melted in the skillet over medium heat.
  • Onion and squash have to be added and cooked for 8 minutes while keeping on stirring. (You need to ensure that the squash becomes tender)
  • Garlic needs to be stirred in and then, salt, cayenne pepper and pepper have to be used to season.
  • This mixture must be placed on a colander that is set over a bowl.
  • Set aside to drain for 5 minutes and then, the liquid must be discarded.
  • Mayonnaise, sour cream and eggs should be whisked together in a big bowl.
  • Parmesan and cheddar have to be stirred in and this mixture has to be seasoned with pepper and salt.
  • The squash mixture needs to be folded in gently.
  • The mixture should be placed on a baking dish.
  • The remaining butter has to be melted and it must be tossed with Ritz crackers.
  • The cracker mixture needs to be sprinkled over casserole.
  • It should be baked for 20 minutes and you must stop when it becomes bubbly and golden in color.
