Brussels Sprouts Salad with Hemp Seeds recipe | Eat ... image

Healthy roasted Brussels Sprouts tossed in a marinade and topped with Hemp Seeds

Total Time 30 minutes

Yield 6

Number Of Ingredients 11

26 ounces Brussels sprouts
1 tablespoon olive oil
2 tablespoons balsamic vinegar
salt
peppers
6 ounces pink, red or purple Grape
1 handful parsley
2 tablespoons Hemp seeds
salt
peppers
1 tablespoon lemon juice (freshly squeezed)

Steps:

  • Wash & cut the brussels sprouts in half. In a salad bowl mix the marinade ingredients. Add the brussels sprouts into the marinade, mix thoroughly with the marinade, spread them on an oiled baking sheet, and bake at 180°F for about 15-20 minutes.
  • Meanwhile cut the grapes in half, wash and chop the parsley.
  • Once the sprouts are roasted, place them on a serving platter, toss with the grapes, parsley, hemp seeds, salt, and pepper. Sprinkle everything with 1Tablespoon lemon juice and serve.
