Total Time 23 minutes

Cook Time 15 minutes

Yield 5 dozen cookies

Number Of Ingredients 9

2 sticks (8 ounces) unsalted butter
1 cup confectioners' sugar
1 teaspoon pure vanilla extract
1/2 teaspoon almond extract
1 large egg
2 1/2 cups all-purpose flour (see Cook's Note)
1 teaspoon baking powder
1/2 teaspoon fine salt
Sprinkles for garnish

Steps:

  • Preheat the oven to 350 degrees F. Beat the butter and sugar with an electric mixer in a large bowl until light and fluffy, about 5 minutes. Add the vanilla and almond extracts and the egg and mix to incorporate; don't worry if the mixture seems to separate.
  • Sift together the flour and baking powder and add to the creamed butter. Mix until combined. Using a cookie press, press the cookies onto ungreased baking sheets. Top with sprinkles of your choice. Bake until firm but not yet browning, 6 to 8 minutes. After a few minutes, move cookies to a rack and cool.

  • Heat oven to 350°F. In medium bowl, whisk together flour and salt. In large bowl, using electric mixer, beat butter and sugar on high speed until light and fluffy, 4 to 6 minutes. Reduce mixer speed to medium, add egg yolk and vanilla, and beat 5 min. Reduce mixer speed to low and gradually add flour mixture, mixing just until incorporated. Then, using spatula, fold dough until it forms a ball. If desired, use food coloring to tint some or all of dough. Fill cookie press according to manufacturer’s instructions. Hold cookie press so it touches a baking sheet (do not line or grease sheet), then squeeze and lift away, spacing cookies 1 inch apart (you will need at least 2 large baking sheets).  Bake, rotating positions of baking sheets halfway through, until cookies are light golden brown around edges, 11 to 13 minutes. Let cookies cool 1 minute on sheets, then transfer to wire racks to cool completely.  Decorate cooled cookies as desired with Royal Icing and sprinkles
