SAVOIARDI (ITALIAN SPONGE FINGER BISCUITS) RECIPE | SIDECHEF
Savoiardi are light, fluffy Italian sponge finger biscuits (Lady Fingers) that can be served by themselves, or used to make the classic Italian dessert Tiramisu. Eggs, sugar, vanilla and flour are combined and piped onto baking trays. Baked until golden, these delightfully light cookies are easy to make but very impressive - give it a go!

Steps:
- Separate the Egg (5). You will need 5 egg whites and 4 egg yolks. Set aside.
- Put Egg Whites and Caster Sugar (2/3 cup) in a mixing bowl, beat it up until it's foamy. Then turn up the speed and keep beating it until we have stiff peaks.
- Take another bowl and add the Egg Yolks, Vanilla Extract (1 teaspoon), and the rest of sugar. Beat it together until it's pale and yellow. Gently fold in half of the egg white. Sift All-Purpose Flour (1 cup) and Baking Powder (1/2 teaspoon) into the bowl. Fold in with rest of the egg whites.
- Spoon the mixture into a zip loc bag and snip off one corner. Take a baking tray lined with some non-stick baking paper. Pipe fingers onto the tray. Preheat the oven 180 degrees C (350 degrees F) and cook for 7 or 8 minutes just until they are lightly golden around the edges. Cool on the tray for 15 minutes then transfer them to a wire rack.

Steps:
- Preheat oven to 400 degrees F (205 degrees C). Line two 17 x 12 inch baking sheets with baking parchment. Fit large pastry bag with a plain 1/2 inch round tube.
- Place egg whites in bowl and beat on high until soft peaks start to form. Slowly add 2 tablespoons of the sugar and continue beating until stiff and glossy. In another bowl beat egg yolks and remaining sugar. Whip until thick and very pale in color.
- Sift flour and baking powder together on a sheet of wax paper. Fold half the egg whites into the egg yolk mixture. Fold in flour, and then add the remaining egg whites. Transfer mixture to pastry bag and pipe out onto prepared baking sheet. Bake 8 minutes.

- Prepare the Italian custard by mixing the eggs with the sugar in a saucepan. Sift in the flour with the vanilla and when absorbed add 500 ml of milk. Heat, stirring all the time, until the liquid begins to thicken. Let it cool. Dip the sponge fingers in the remaining milk to which you have added the cherry syrup. Arrange in a rectangular baking dish and alternate with a layer of Italian custard. Continue until all ingredients are used up, ending with a layer of custard and cherry syrup. Place in refrigerator for at least 3 hours before serving.
