Spinach Lasagna II Recipe | Allrecipes image

A tasty recipe that will make others believe that you spent hours in the kitchen, but only you'll know that you didn't!

Yield 8 to 10 servings

Number Of Ingredients 11

1 (1.5 ounce) package spaghetti sauce mix
1 (6 ounce) can tomato paste
1 (8 ounce) can tomato sauce
1 ¾ cups water
2 eggs
1 pint ricotta cheese
½ teaspoon salt
1 (10 ounce) package frozen chopped spinach, thawed and drained
½ cup Parmesan cheese
8 ounces sliced mozzarella cheese
8 lasagna noodles

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 13x9 inch baking dish.
  • In a medium saucepan, combine spaghetti sauce mix, tomato sauce, tomato paste and water. Bring to a boil over medium heat then remove from heat and let cool.
  • In a medium bowl, beat the eggs and combine them with the ricotta or cottage cheese, salt, spinach and 1/4 cup of the Parmesan cheese.
  • Spread one half cup tomato sauce mixture into the prepared baking dish. Place half the uncooked noodles over the sauce, spread with half the spinach mixture, half the mozzarella cheese, and half of the tomato sauce. Repeat layers, using remaining ingredients. Top with remaining Parmesan cheese.
  • Cover dish securely with aluminum foil and bake for in the preheated oven 1 hour. Let stand 10 minutes before cutting and serving.

These EASY Spinach Lasagna Roll ups are totally delicious, perfect for entertaining or serving for weeknight meals. Freezer friendly.

Number Of Ingredients 8

2 cups homemade marinara sauce (plus more for serving)
9 uncooked lasagna noodles (wheat or gluten-free)
10 oz package frozen chopped spinach (thawed and squeezed well)
15 oz part skim ricotta cheese (I like Polly-o)
1/2 cup grated Parmesan cheese
1 large egg
kosher salt and fresh pepper
9 tbsp about 3 oz part skim mozzarella cheese, shredded

Steps:

  • Preheat oven to 350°F. Ladle about 1 cup sauce on the bottom of a 9 x 12 baking dish.
  • Cook noodles according to package directions, then drain.
  • Combine spinach, ricotta, Parmesan, egg, 1/2 teaspoon salt and black pepper in a medium bowl and mix.
  • Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry. Take 1/3 cup of ricotta mixture and spread evenly over noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.
  • Ladle remaining sauce over the noodles and top each one with 1 tbsp mozzarella cheese. Put foil over baking dish and bake for 40 minutes, or until cheese melts. Makes 9 rolls.
  • To serve, ladle a little sauce on the plate and top with lasagna roll.
