1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
2 tablespoons butter
1 teaspoon finely chopped garlic
2 cups packed baby spinach, coarsely chopped
1 cup shredded Parmesan cheese
1 jar (6 oz) Progresso™ marinated artichoke hearts, drained and chopped, patted dry with paper towels
4 eggs
1 cup heavy whipping cream
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Heat oven to 375°F. Unroll crust in ungreased 9-inch glass pie plate. Press crust firmly against side and bottom. Fold excess crust under, and press together to form thick crust edge; flute. Prick bottom and side of crust with fork. Bake 9 to 10 minutes or until lightly browned; cool 5 minutes.
  • Meanwhile, in 10-inch nonstick skillet, melt butter over medium heat; add garlic, and cook 1 to 2 minutes, stirring frequently, until fragrant. Gradually add spinach, and cook until just wilted; remove from heat.
  • Layer cheese, artichokes and spinach mixture in crust. In medium bowl, beat eggs, whipping cream, salt and pepper with whisk until well blended. Pour into pie crust, carefully stirring to evenly distribute spinach.
  • Bake 30 to 35 minutes or until knife inserted in center comes out clean; if needed, cover edge of crust with foil during last 5 to 10 minutes of baking to prevent excessive browning. Cool 10 minutes before serving. Cut into wedges.

1 (9 inch) unbaked pie crust
4 eggs
5 slices cooked bacon, crumbled
½ cup shredded mozzarella cheese
2 tablespoons milk
2 tablespoons all-purpose flour
2 cloves garlic, minced
1 teaspoon parsley
½ teaspoon thyme
1 cup spinach leaves, divided
½ cup canned artichoke hearts, drained and chopped
2 roma (plum) tomatoes, sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Press pie crust into a 9-inch pie dish.
  • Beat eggs, bacon, mozzarella cheese, milk, flour, garlic, parsley, and thyme together in a bowl until evenly combined.
  • Arrange 1/2 of the spinach in the bottom of the pie crust; sprinkle artichoke hearts over spinach layer. Pour egg mixture over artichoke hearts. Layer the remaining spinach over egg mixture; top with tomato slices.
  • Bake in the preheated oven until a knife inserted in the center of the quiche comes out clean, about 45 minutes.

  • To make the crust place flour and salt in a food processor and pulse to combine. Add butter and pulse until butter is slightly larger than the size of peas. Add water 1 tablespoon at a time until mixture starts to come together. Dump dough out onto a lightly floured surface and form into a disc. Wrap in plastic wrap and refrigerate until firm, 30 minutes. Preheat oven to 375°. On a lightly floured surface roll crust out to a ¼” thick and drape over a 9” pie plate. Fold excess crust under itself and crimp the edges. Place in freezer until ready to use. Make the filling: Whisk together eggs, cream, garlic powder, and red pepper flakes. Season with salt and pepper. Set aside. Poke bottom of crust all over with a fork then scatter spinach, artichoke, and cheddar over the crust. Pour in egg mixture then sprinkle with parmesan. Bake until crust is golden and quiche is just set, 35 minutes. Let rest 15 minutes before serving.
