Cheesy Taco Shells with Spicy Beef | So Delicious image

Replace the traditional taco shells with some made with cheese. They are crispier and tastier! And if you fill them with a spicy, aromatic beef and red beans mixture, you'll get close to perfection!

3.5 ounces of parmesan
3.5 ounces of cheddar cheese
3 tablespoons of vegetable oil
7 ounces of ground beef
½ red onion
1 garlic
1 chili
salt
cumin powder
chili flakes
⅓ cup diced tomato, canned
2 ounces of red bean, canned
4 baby corns

Steps:

  • Preheat the oven to 360 degrees F/180 degrees C.
  • Shred the parmesan and the Cheddar. Keep 0.5-ounce (15 grams) of Cheddar. Mix the shredded cheese in a bowl.
  • Put a parchment paper on a baking tray. Using a cooking ring (2-inch/6 cm diameter), press some cheese mixture on the bottom of the tray. Make circular shapes.
  • Bake the cheese circles for about 10-12 minutes, until the cheese melts.
  • When the cheese circles are still warm, put them on a thin rolling pin. When the cheese cools, it will stick in a curved shape, like taco shells.
  • In a skillet, heat the vegetable oil.
  • Dice the red onion and the garlic. Slice the chili.
  • Cook the ground beef, onion, garlic, and chili.
  • Season with salt and cumin powder.
  • Add the diced tomatoes, red beans, and baby corn.
  • Serve the beef in cheesy taco shells.

These are so good, you may NEVER buy taco shells again! But be prepared to be the last one to have a chance to sit down and eat. As soon as I sit down to eat my first taco, my guests are needing their 3rd or 4th or 5th one cooked...But, it is well worth it to hear that these are the best tacos they have ever had!

1 cup flour
1/2 cup yellow enriched cornmeal
1/4 teaspoon salt
1 1/2 cups water
1 egg

Steps:

  • Preheat a dry skillet over medium/high heat.
  • Mix the ingredients well.
  • The batter will be runny.
  • Drop by large utensil spoonful onto skillet, quickly spreading the batter in a circular motion, working from the inside out.
  • Each side only takes about 1 minute of cooking.
  • The shells are not supposed to brown.
  • When the shells are removed from the pan, they can be molded into"taco shell shape" by placing, half-curled, between two objects, such as coffee cups.
  • I like to serve them to each guest directly from the pan without molding them, however, becuz I find that they dont crack while still hot and pliable.
  • Fill with all the taco stuffin's and enjoy!
