Spicy Simple Syrup Recipe - NYT Cooking image

This recipe is a loose template; use any spice that seems festive and appealing to you, but bear in mind you are adding a relatively small amount of syrup per drink, so it pays to make it forceful. This blend includes cinnamon, allspice, star anise, cloves, vanilla and ginger root.

Yield Makes roughly 4 cups.

Number Of Ingredients 8

2 cups sugar (evaporated organic cane sugar from Trader Joe’s works well)
4 cups water
12-15 cinnamon sticks, broken up
10 star anise pods
1/4 ounce whole allspice (a large handful)
1/8 ounce whole cloves
1 vanilla pod, sliced down the center and opened out
1 large ginger root, 4 to 6 ounces, grated.

Steps:

  • Place all ingredients except sugar and ginger in a large saucepan and bring to a boil. Turn down the heat and simmer, covered, for two hours. Remove from heat and stir in sugar until well dissolved. Cool to room temperature, then grate the ginger and stir in. Cover and set aside for at least 12 hours. Strain through a fine-mesh sieve into a sealable jar and refrigerate.

This Spiced Simple Syrup is a riff on a classic simple syrup. Cardamom, cinnamon, star anise, ginger, peppercorns, and fennel seeds instill the spicy notes. Our simple syrup will take a bit more time than the classic version that only includes sugar and water but, we can assure you, your cocktails will thank you. After simmering, be sure to cool to room temperature before straining the mixture with a wire-mesh strainer. The syrup will keep in the refrigerator for up to two weeks. Use Spiced Simple Syrup in our Spiced Hard Cider Fizz. It's a festive fall drink that is perfectly suited to be the signature cocktail at your Thanksgiving dinner.

1 cup granulated sugar
1 cup water
6 cardamom pods
4 (3-inch)s cinnamon sticks
3 star anise pods
1 tablespoon sliced fresh ginger
1 teaspoon black peppercorns
1/2 teaspoon whole fennel seeds

Steps:

  • Combine 1 cup granulated sugar, 1 cup water, 6 cardamom pods, 4 (3-inch) cinnamon sticks, 3 star anise pods, 1 Tbsp. sliced fresh ginger, 1 tsp. black peppercorns, and 1/2 tsp. whole fennel seeds in a small saucepan. Bring to a boil over medium-high, stirring constantly until sugar dissolves. Reduce heat to medium, and simmer 20 minutes. Remove from heat, and cool to room temperature, about 30 minutes. Pour through a fine wire-mesh strainer, discarding solids. Store in an airtight container in refrigerator up to 2 weeks.
